Chicken in Dijon Sauce

Ingredients

•Garlic

•Red Grapes

•Ciabatta Bread (ContainsWheat, Soy)

•Chicken Cutlets

•Chicken Stock Concentrate

•Dijon Mustard

•Sour Cream (ContainsMilk)

•Mixed Greens

•Walnuts (ContainsTree Nuts)

•Balsamic Vinegar

•Olive Oil

•Butter (ContainsMilk)

•Salt

•Pepper

Utensils:
•Small Bowl
•Large Pan
•Paper Towel
•Large Bowl
•Baking Sheet

INSTRUCTIONS:
1.-Heat broiler to high. Wash and dry produce. • Peel and mince garlic. Halve grapes. Halve ciabatta. • Place 2 TBSP butter (4 TBSP for 4 servings) in a small microwave-safe bowl; microwave until just softened, 10-15 seconds. Stir in half the garlic. Season with salt and pepper.

2.-Pat chicken* dry with paper towels; season all over with salt and pepper. • Heat a drizzle of olive oil in a large pan over medium-high heat. Add chicken; cook until browned and cooked through, 3-5 minutes per side. • Transfer chicken to a cutting board.

3.-Add remaining garlic to same pan; cook until fragrant, 30 seconds. • Stir in stock concentrate and ¼ cup water (1⁄3 cup for 4 servings). Simmer until reduced, 2-3 minutes. • Stir in sour cream, half the mustard, and 1 TBSP plain butter (2 TBSP for 4); remove from heat. Season with salt and pepper. (Taste and add more mustard if desired.)

4.-Meanwhile, in a large bowl, toss mixed greens, grapes, and walnuts with half the vinegar (all for 4 servings) and a large drizzle of olive oil. Season with salt and pepper.

5.-Spread cut sides of ciabatta with garlic butter; place cut sides up on a baking sheet. Broil until golden brown, 2-3 minutes. TIP: Watch carefully to avoid burning. • Halve garlic bread on a diagonal.

6.-• Thinly slice chicken crosswise. • Divide chicken, salad, and garlic bread between plates. Top chicken with pan sauce and serve.

Crustless cheesecake for the win 😋 This might be one of the most identical tasting replacements to the high carb version because you’re basically using the same ingredients as regular cheesecake! .
By the way, It would be easy to make a crust for this, just google it lol there are tons of recipes. I’m just kinda lazy sometimes 😂 Have you made keto cheesecake before?! Did you make it with Crust or nah? What kind of crust if so?
Ingredients:
- 4 eggs
- 1/3 cup sour cream
- 24 ounces cream cheese (the blocks of Philadelphia 1/3 less fat cream cheese have less carbs)
- 1 tsp vanilla
- 1 cup erythritol
- Oil for greasing the pan
Instructions:

1. Add cream cheese to bowl and let soften (optional)
2. Preheat oven to 350F
3. Beat cream cheese until smooth
4. Add the rest of the ingredients except the eggs and mix for around 2 minutes
5. Either add each egg one at a time and mix well, or you can add all eggs at once and pour mixture into blender and mix that way
6. Slightly oil the inside of the springform pan
7. Add mixture into 9" springform pan & Add to oven for 45 minutes or until the edges start to turn light brown
8. Let sit out for 1 hour and then add to refrigerator for atleast 3 hours & enjoy! .
Macros: serving size is 1 slice
(Recipe makes 10 slices)

Stuffed chicken breast 🔥 I HIGHLY recommend having this with A LOT of sour cream 🤪
You can use the veggies of your choice tbh, these are just the ones I had in my fridge lol
Ingredients:
3 boneless chicken breasts
1/4 cup zucchini
1/4 cup sliced bell peppers
1/4 cup sliced tomatoes
1 cup shredded cheese
3 slices fully cooked bacon
Seasonings of preference .
1. Preheat oven to 400F.
2. On a parchment lined baking dish cut 4 slits into each chicken breast, fill with veggies, & top with cheese.
3. Bake for 15 minutes, take out, add bacon, put back in (10-15 mins) until chicken reaches internal temp of 165F. Enjoy! 😋
Macros will vary based on size of chicken breasts and veggies used.

Ingredients;
4 jalapeno peppers
3 oz cream cheese
3 tbsp shredded cheddar cheese
4 slices bacon (thin sliced is best)
Seasonings of preference .
Instructions:
1. Preheat oven to 350F. Cook the bacon until it’s 1/3 the way done.
2. Cut the jalapeños in half length wise, and remove the insides (try not to use your fingers or they will burn 😂)
3. Mix cream cheese, cheddar, & seasonings in a bowl and then fill each jalapeño half with the mix.
4. Tear bacon in half length wise and then wrap around each pepper, bake for 20-25 minutes. You can broil for the last few minutes.
5. Make sure bacon is fully cooked and enjoy! .
Macros; serving size is 4 poppers, recipe makes 8.

Since I was young, my little not so little brothers use to say that my meals were strange looking 👀! Each time I would say hum taste it you’ll see. They would taste and boom 💥 🤭 They would make the recipe their own and eat the same damn thing every other day! I’ve always been that creative lazy cooking girl and I believe the quick meals are the best ! ( I used my meal prep mashed cauliflower so this took me literally 15 min)!⁣

🌋INGREDIENTS :⁣
For the Mashed cauliflower (from my meal prep)⁣
2 medium head cauliflower⁣
4 tbsp Heavy cream⁣
Salt and pepper⁣
2 -3 tbsp of butter⁣
75g of parmesan (optional) (i add it sometimes but had to ease on the cheese this week)⁣

📝DIRECTIONS:⁣
1. put water to boil over high heat.⁣
2. Clean and cut cauliflower into small pieces.⁣
3. Cook in boiling water for about 6 minutes, or until well done. (Tender but still a little bit firm) BIG TIP: drain well (dont let it cool down) & pat cooked cauliflower very dry between several layers of paper towels.⁣
4. In a bowl with an immersion blender, or in a food processor, or potato masher, blend the hot cauliflower with the ingredient until desired texture.⁣

👨‍🍳For the ground beef & sauce:⁣
- seasoned salt - Garlic powder -pinch of crushed peppers - Olive oil⁣
-⁣
1. Pan fry the ground beef with spices until well cooked⁣
2. 2 cups of tomato sauce (lowcarb)⁣
3. 1/3 cup of heavy cream -⁣
This plate has one cup of mashed cauliflower and 1 cup of beef! 1/4 cup of shredder mozza-cheeddar cheese on top !! 🥘 🥘.⁣

1 cup PB (I used natural)
1/3 cup powdered erythritol (or 2/3 cup granular)
1 egg
1/4 tsp vanilla extract
Optional:
Dash of salt .
Instructions:
1. Preheat oven to 350F.
2. Mix all ingredients, roll into 10 1.5 inch balls, spread out on parchment lined baking sheet.
3. Press down with fork twice. Bake for 10-15 minutes until they begin to turn slightly darker.
4. Take out, let cool, and enjoy!
Macros: Serving size is 2 cookies. Recipe makes 10 cookies & 5 servings total.
Calories: 314
Fat: 28g
Protein: 14g
Net carbs: 1.6g
Fiber: 4.8g
If you’re using granular erythritol, it will be much less gritty if you blend before using! .
Depending on the brand of PB you get and the harvest of peanuts, net carbs will vary. This was the great value natural stir PB which has 1 net carb per 2 tbsp. Any PB is fine even if it has sugar lol. .

INGREDIENTS:
Bottom Layers:
1.5 TBSP melted butter
4 TBSP chopped walnuts
1 TBSP ground pecans
5 drops pumpkin spice flavour
1 splash of sugar-free maple syrup.
Mix together and scoop a small amount into the bottom of jars. Adds a bit of crunch.

Cheesecake:
1 block (8 oz) cream cheese
1 Tsp vanilla
1 cup heavy whipping cream
3/4 to 1 Tsp pumpkin pie spice
10 drops pumpkin spice flavour (OR increase spice above to taste)
1/4 cup powdered sweetener
3 TBSP ground pecans
1/3 cup pure pumpkin (optional)

Bagels: 2 Oz cream cheese 2 1/2 cup mozzarella

microwave for 2 minutes stirring 1/2 way

Add 1 egg Add 1 1/2 cups almond flour Add 1 tbsp baking powder

Mix well and knead until dough is well mixed.

Cut into 6 even pieces, roll each piece like a play-dough snake and met then ends (like a bagel)

Bake at 400 for 10-14 minutes.

Top with avocado (100g) (smushes with a bit of salt) Tomatoes (50g) Bacon Eggs your way! I like mine over easy.

As for his and hers … we like to split down the middle, so we get to try both. How do you split it?

Even though I stuffed these, I always like to marinate my chicken in advance. It adds a ton more flavour and makes them juicier. And as for the stuffing, you can really stuff them with anything you have on hand.

Recipe 📜
1. Grab two chicken breasts and cut in the middle to create a pocket. As if you were butterflying it, but only go halfway. Put both in a large ziplock bag or glass container and then add the items below.
2. Marinate the chicken with juice from 1/2 lemon, sea salt, ground pepper, garlic powder, smoked paprika, and ginger. I go for about 1 tsp of each of these, but feel free to substitute out any or go lighter of heavier however way to you prefer. Also, free free to skip this step completely if you’re in a crunch for time. Put in the fridge overnight.
3. Remove breasts from the fridge and stuff however way you like. For the pepperoni pizza one, I chopped up 1/2 ounce pepperoni and mixed in with 2 tablespoons marinara, 3 tablespoons mozzarella, 1 crushed garlic clove, and 1/8 cup finely chopped mushroom in a small bowl, then spooned it all in the middle.
4. For the spicy goat cheese and spinach stuffed, I chopped up a small handful of spinach and mixed in with 1/2 ounce room temperature goat cheese, 2 tablespoons cheddar, 1 crushed garlic clove, 1/2 tablespoon chipotle mayo and some fresh ground black pepper.
5. Put in the oven at 425F for 28-30 mins, until chicken is cooked through. Time varies by oven.
6. Go halfsies with someone who deserves it, or just devour on your own!

INGREDIENTS:
200g hazelnut meal
50g Ghee
50g Coconut Oil
30g erythritol
1/2 Tbsp cinnamon
1 egg
2 cups heavy cream
50g powdered erythritol
50g chocolate 90%, melted
100g mascarpone

INSTRUCTIONS:
1. Tarts: Preheat oven to 350F.
2. Mix hazelnut meal, ghee, erythritol & cinnamon with a hand mixer. Mix in one egg. Divide the dough evenly between all the previously greased tart tins (I had six).
3. Press the dough, then make holes with a fork. Bake for 15 minutes.
4. Remove from oven, and cool for about half hour. DO NOT attempt to take them out of the tins before they have cooled down.

MOUSSE:
1. Beat heavy cream until stiff peaks.
2. Add powdered erythritol, melted chocolate and mix until uniform.
3. At the end, beat in mascarpone. Fill the tarts and refrigerate for an hour.

INGREDIENTS:
1 large egg room temperature
1/3 cup butter softened, OR ghee
2/3 cup golden monk fruit sweetener
1 1/2 teaspoons vanilla extract
1 cup superfine blanched almond flour
2 tablespoons coconut flour
1/2 tsp xanthan gum .* 1/2 teaspoon baking soda
1 teaspoon cinnamon
3 oz unsweetened dark chocolate, coarsely chopped
Coarse sea salt, for sprinkling (optional)

INSTRUCTIONS:
1) Preheat oven to 350 degrees F.
2) In a large bowl, beat the egg then whisk in softened butter (ghee), monk fruit sweetener and vanilla extract
3) Stir in the almond flour, coconut flour, xanthan gum, baking soda and cinnamon until combined.
4) Fold in chopped chocolate.
5) Use a small cookie scoop to drop dough onto an ungreased baking sheet. The cookies do NOT spread much so gently flatten the dough with your hand or the bottom of a small glass.
6) Bake for 11-13 minutes, or until edges are slightly golden brown. Sprinkle with coarse sea salt and allow to cool on cookie sheet for 10 minutes before transferring to a wire rack to finishing cooling.
7) STORE IN THE FRIDGE - these cookies taste even better when you chill them in the fridge overnight.

Classic soft and chewy 1 NET CARB KETO Chocolate Chip Cookies!! EASILY one of my most popular YouTube videos, and for good reason....they’re straight up 🍪🔥

The NUMBER ONE pro-tip for these is letting them cool. If you try to eat them warm, they’ll have more of a “cake-y” consistency. But if you let them cool, they’ll set, and become much more chewy like you see in the video.
