This year, one woman did what *some* people thought no woman could do.

That woman was Jasmin Paris, fell- and ultra-runner who completed the Barkley Marathons, a near-impossible 100 mile course across 5 soul-destroying loops.

Jasmin is the first ever woman and only the 20th person to complete this incredible feat.

This was her second attempt, and she finished with 99 seconds to spare, a true display of resilience, grit and believing in yourself no matter what.

But this wasn’t Jasmin’s first epic achievement. In 2019, she won the Spine race along the Pennine Way, the first woman to do so AND smashed the men’s race record by 12 hours.

Congratulations to Jasmin, who says one of her top motivations is showing other women and girls what’s possible: “I did it for me, but I did it for women worldwide as well - not just runners - but any woman that wants to take on a challenge and maybe doesn't have the confidence.”

With Mother’s Day around the corner, we would like to shout out all the amazing moms out there, in all their beautiful forms.

Princess here had one little kitten on her own, then took on the role of foster mama and helped feed four more baby kittens while we located their mom. Just amazing, and so, so cute 💙 Princess and the babies are in foster and not available for adoption at this time.

While no one meal will make or break your goals, your meals and snacks for the day all together add up to how to achieve them.
⁠⁠
Things like portion size and type of food can make a big difference when you have a specific goal in mind like weight loss, maintenance or muscle gain. There are so many simple adjustments you can make to a meal that can really add up when it comes to getting the results you want with healthy eating. That’s why I wanted to share a few examples of how these simple changes can add up to big results. ⁠⁠

Breakfast:⁠⁠
-½ cup oats -> ½ cup oats -> ¾ cup oats
-½ tbsp almond butter -> 1 tbsp almond butter
-½ cup strawberries -> ½ cup strawberries -> 1 banana
-¼ cup blueberries -> ⁠¼ cup blueberries -> ⁠⁠1 tbsp pecans
-Coffee w/ collagen -> Coffee w/ collagen & 1 tsp MCT oil

-no crackers -> 7 crackers -> 15 crackers

-zucchini noodles -> 2 oz red lentil noodles -> 3 oz red lentil noodles
-¾ cup marinara -> ¾ cup marinara -> 1 cup marinara
-½ cup ground turkey -> ½ cup & 2 tbsp ground turkey -> ¾ cup ground turkey
-1 tbsp mozzarella -> ⁠⁠1 tbsp mozzarella -> ⁠⁠3 tbsp mozzarella

Dinner: ⁠⁠
-3 oz pork loin -> 3 oz pork loin -> 4 oz pork loin
-¾ cup cauliflower mash -> ½ cup mashed potato -> 1 cup mashed potato
-1 tsp grass fed butter -> 2 tsp grass fed butter -> ½ tbsp grass fed butter
-2 tsp avocado oil
-2 cups spinach
