Super crazy easy dinner with only 4 ingredients!

Spaghetti squash with sautéed mushrooms and spinach (I added shrimp for protein).

1 spaghetti squash
6oz bag baby spinach
4oz sliced mushrooms
1 small can slice black olives

-Preheat oven to 375 and cut the spaghetti squash in half. Place cut side down on a cookie sheet or a 9x12” casserole dish (whatever your squash fits best.
-Add 1 cup water to the pan with the squash (provides some steam to help the squash cook) and cook in oven for 45-60 min depending on your oven and the size of your squash.
-While the squash is cooking (the last 10 min of the cook time) sauté the mushrooms and spinach in some coconut oil for 5 min. Cover and let it cook another 5min and s**t the heat off.
-Once the squash is done, use a fork to pull up Art the squash fibers and mix intone spinach and mushroom mixture. Add 1tbsp olive oil and 1 small can of slice black olives. Mix it all together and serve.

This was so good and I wish I would have had a larger squash or a second one. I could have easily eaten half of the entire batch!

Know what you want (clear as day)! Then say no to anything that doesn’t help you get there.

Daily mantras: Do you ever have to talk to yourself to help keep yourself motivated or in a positive mindset?

Having mantras that you say frequently is actually very normal! They can help keep you focused and in a positive mindset.

This is one that I have to say pretty much anytime I look on the mirror. Yep I say this exact phrase multiple times a day.

Why? Because it is so easy to see what is reflected on the mirror and not see progress. Not seeing the progress can lead to discouragement.

Remember that your progress may not be visible on the outside but you are always making progress towards your goals if you are consistently taking action.

I will be taking a break from social media tomorrow Tuesday December 13, 2022 to take care of my kiddos. One of them has been running high fevers of greater than 103 (it might finally be breaking after 24hrs of it being above 101)

Simple. It is my way of cooking. It’s how I feed my family.

Why? Because complicated recipes take more time, stress me out cause I’m a bit of a perfectionist and I hate having ingredients go bad cause I only needed them in 1 or two meals.

I also do simple because it makes it easier for me to plan my family dinners for the week. I know what to buy, how much to buy and I don’t stress about it.

What happens when I don’t plan out the week in advance? My nutrition gets affected and I start to eat things that aren’t as good for me and don’t help me achieve my goals. Unfortunately that has been my struggle for the last couple of months

I share not to get sympathy or pity, but to show you that you are not alone in the struggle

You are capable of making the changes necessary and reaching your goals! Join me and my amazing community of inspiring women and let us lift you up and help you step into this new year already feeling healthier, stronger and more confident.

Consistency can be hard for the most seasoned of athletes. Life will always be a bit bumpy and those bumps in the road could cause you to fall off track if you let it.

Consistency had been something I had been really good with, especially with my exercising. But even that lately has been a bit of a struggle. Nutrition has had its ups and downs.

I have to remind myself that it isn’t about perfection. It is about simply trying to be better than the day before. If you stumble, get back up and keep going.

Mama it is ok if you aren’t perfect! Take a deep breath and remember that you’ve got this! You are capable of anything and can do hard things.
