Starting your day with protein is a great way to fuel your body and help you feel full for longer! Instead of driving through your favorite coffee shop for egg bites, whip these up ahead of time and reheat them through the week! This homemade version boasts up to 10 g of protein per bite!
Instructions:
Preheat oven to 350°. Cook turkey breakfast sausage in a pan on medium-high heat until cooked through, breaking into crumbles, or cook turkey bacon in a pan until crispy and cut into bite-size pieces. Dice veggies. Spray a 12-cup muffin pan with cooking spray, or use a silicone muffin pan.
Divide meat, veggies, and cheese evenly among muffin cups. In a blender, mix eggs, egg whites, and cottage cheese. Season with salt and pepper to taste. Pour mixture over the fillings, filling cups about ¾ full.
Bake for 25-30 minutes or until completely set & no liquid remains. Cool & enjoy!
Store in an airtight container in the fridge.
