๐Ÿฅ—Make this Faux Waldorf Salad

INGREDIENTS
2 heads Bibb lettuce
1 lb oven-roasted turkey breast, skin removed (request ยฝ-inch slices from your deli counter)
ยฝ cup chopped walnuts
ยฝ cup dried cranberries (e.g., Raisinsยฎ)
1 pear, cored and sliced
1 tbsp pear vinegar (if not available, can substitute ยฝ apple cider vinegar and ยฝ sherry vinegar)
3 tbsp olive oil
Salt and pepper to taste

PREPARATION
Wash and chop the two Bibb lettuce heads.
Drain excess liquid and place in a large bowl.
Cut turkey into ยฝ-inch cubes and set aside.
Place walnuts and dried cranberries in bowl with lettuce.
Core and slice pear and add to lettuce mix.
Make a pear vinaigrette by whisking together pear vinegar and olive oil.
Toss lettuce, pear slices, walnuts, and dried cranberries together with vinaigrette.
Add salt and pepper to taste.
To serve, distribute salad equally onto four plates.
Top with turkey cubes.

In the mood for a burger that wonโ€™t feel like you ate a burger two hours later?

Try our Lamb Burgers with Mint Sauce and Tomato Salad

INGREDIENTS
Nonstick spray
4 garlic cloves, peeled and chopped
1 lb ground lamb
1/2 tsp salt
1/2 tsp ground black pepper
3/4 tsp ground cumin
3/4 tsp dry oregano
1 cup low-fat yogurt
1 tbsp fresh mint, chopped
1 tbsp red wine vinegar
1/2 medium cucumber, peeled and chopped
4 medium tomatoes, diced
1 small onion, roughly chopped
2 tbsp balsamic vinegar
4 large (about 2 oz each) multigrain hamburger buns

Preheat a small skillet to medium and coat with nonstick spray. Sautรฉ the garlic cloves until lightly brown.
Mix the ground lamb, salt, pepper, cumin, oregano, and browned garlic in a bowl.
Form four burgers. Preheat large skillet to medium. Add burgers and cook until desired doneness, about 4-5 minutes each side.
While burgers are cooking, mix yogurt, mint, red wine vinegar, and cucumbers in a small bowl. Set aside. Combine tomatoes, onions, and balsamic vinegar in a separate bowl.
Set aside. Split rolls.
Place one patty on top of bottom of roll. Top each patty with 1/4 yogurt mint sauce and top with roll. Serve with tomato salad on side.

Looking for an impressive, yet simple salad recipe? Weโ€™ve got it. Make this Southwestern Salad with Shrimp (Feel free to sub shrimp with any protein)

INGREDIENTS
Nonstick spray
1 lb medium shrimp, peeled and deveined, tail off
1/2 cup barbecue sauce, divided
12 cups mixed salad greens
2 cups baby corn
2 cups black beans
2 avocados, sliced
1/2 cup light ranch dressing

PREPARATION
Preheat medium skillet to medium heat. Spray with nonstick spray. Mix shrimp in a bowl with 1/4 cup barbecue sauce. Sautรฉ until just cooked, about 3 to 5 minutes.
While shrimp is cooking, toss mixed greens in large bowl with corn, black beans, and avocado slices. Remove shrimp and coat with remaining 1/4 cup of barbecue sauce. Add shrimp to salad.
Top with ranch dressing, tossing well to coat. Arrange in four equal bowls.
