I’ve been a bit quiet but I’m still here 👋. I’m soaking up all summer has to offer, unplugging from most social media, showing up and being present for my family, my patients and myself. This is a favorite salad dressing of mine that my aunt makes. Simply 🖐🏻 ingredients, super easy and quick to make. My kids love it and ask for it often. Perfect for summer salads, as a marinade for chicken, fish or shrimp.
1 cup olive oil (evoo)
1/2 cup fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon dried oregano
5 (or so) peeled and smashed garlic cloves
Wisk together

Mushroom and Asparagus Risotto. I love risotto for it’s creamy texture and classy comfort! It’s a bit labor intensive with all the stirring {but hey, you’ll get an arm workout too}but so worth it! I always use broth when making any rice dish. Bone Broth is next level! 10 grams of protein per serving along with collagen for healthy skin, nails and gut; it’s definitely a game changer. I used their chicken and mushroom bone broth and it was perfect for this dish.
Risotto is a dish that you can get creative with. Use farro {contains wheat} instead of Arborio rice for a chewier texture. I used plant based parm but go ahead and use Parmigiano-Reggiano or Pecorino should you like.

Breakfast, lunch and snack prepped and packed for today. Meal prepping and planning are two ways to set yourself up for success! I meal plan every weekend for the upcoming week. Not only does this limit buying foods I don’t need (also a big $ saver), I also know ahead of time what will be for dinner any given night after a long day at work. Breakfasts and lunches don’t change a whole lot week to week so this is typically an autopilot thing. I find that prepping and planning creates a positive mindset and awareness to how we nourish ourselves.

I wasn’t feeling the weather today. 21 degrees with a “Feels Like” of 5 degrees 🥶was not in my movement plan for today. However, movement is always in my plans. Everyday. Whether it’s a sweat sesh at the gym 🏃🏻‍♀️ getting onto my mat for yoga 🧘🏻‍♀️ or spending time out in nature🌳🚶‍♀️⛷🥾it’s a time I carve out for myself.

Walking this strip of hallway for 30 minutes was not exactly what I wanted to be doing. Pairing it with listening to my book on made the task less undesirable. The time actually went by faster than you would have thought! And I logged some serious steps! 👍

The point is, if it’s important to you, you will find a way to do it anyway. Get outside, get away from your desk, get off the couch, whatever it is, get moving!

Awesome farmer’s market this weekend hosted by
My market haul consisted of salmon from and lots of veggies including red lettuce and tatsoi from in my salad. Along with this gorgeous watermelon radish from (and their Yukon gold and sweet potatoes, carrots and cider donuts yum!) There was no way I was leaving without a rotisserie chicken from Their Tuscan seasoned is to die for and perfect shredded on top of salad or in a sandwich.
Get out when you can and support your local farmers! Food doesn’t get fresher than this!
