Can't remember if I posted this delicious dish yet. This is a cauliflower head with the stem cut out so it sits flat. The recipe called for a cup of Mayo and a cup of cheese spread over the top then baked in the oven at 425F for 20 minutes. I made it like that the first time and it was good but a bit bland on the inside. So the second time I sprinkled powdered ranch on the bottom then flipped it over and added a little ranch to the map mayo/cheese mixture. 😋 That made all of the difference!! Even got the kids to eat some.

Probably went a bit overboard on the cheese. 😆 But, working on getting my 3 cups of greens and sulphur rich foods. 👍👍😋

Another salad today: Country salad.

Not every meal is an Instagram worthy win. Tonight I attempted mashed potato stuffed meat loaf. The recipe only called for 2 lbs of meat, which didn't seem like enough, but I decided to try it anyway.

😆 It wasn't enough.

The meat load stuck to the pan AND it didn't seal enough to hold in the potatoes. It came out of the pan a hot mess.

One of the recipes I saw lined the entire pan with 28 pieces of bacon and then wrapped the top with bacon. My husband pointed out he bet THAT wouldn't have stuck (and been very yummy). LOL

Even without the bacon and it looking a hot mess, the kids ate it right up and asked me to make it again. So adding to the rotation and hopefully the practice will allow me to perfect it.

In an effort to eat more salads, I'm experimenting with different varieties. Today I tried 'hamburger salad' complete with all of my favorite hamburger toppings in addition to seasoned ground beef: onions, pickles, and cheese. I topped it with the homemade Mayo, ketchup, mustard, and pickle juice based dressing. I added a bit more sweetener and onion powder than the recipe called for, but it ended up tasting exactly like a loaded cheeseburger sans the bun. Even served it with a side of air crisped fries (which were delicious dipped in the sauce).

Not all gluten is created equal, and this type can be eaten by many people suffering from non-genetic gluten intolerance.
