Carrie got me an AeroGarden for Christmas and the dill plant is out of control! I’ve cut 8 bunches off already and it’s still towering over the other plants. In the chaos of it all I quickly took to pickling, I’m still waiting on the natural pickling method as it takes several days, but the quick method tastes amazing! I’ll put what I did for a recipe below.
Quick Pickling Method
Mix:
1.5 cups water
1/2 cup rice vinegar
2 tbsp sugar
1 tsp salt
3 bunches chopped fresh dill(1 is fine)
1 tsp red chili flakes
1/2 tbsp black pepper corns
ADD:
2 sliced garden cucumbers
3 cherrie tomatoes halved
3 baby bell peppers sliced
Cover in glass container, shake to mix, then let sit for 24 hours in the fridge.
Brine can be used again, tastes great on salad too as a dressing!
