I thought in the past that maturity only meant a loud confidence or a certainty with who you are, your beliefs, your values, a true conviction in your words and actions, staying grounded, unapologetic for your standards and the boundaries that you’ve set and yes, it is those things… but it’s so much more!

There is beauty in the other facets of maturity, particularly humility and gentleness.

I don’t think this is talked about enough. Humility teaches us that we don’t know everything and that it is OKAY. Gentleness teaches us that some things need to be dealt with with a whisper, not a roar. Both are also gifts from our Father whose spirit lives within us for those who believe.

It’s very fascinating isn’t it? I’m just here to embrace these truths I’ve come to find out through all my experiences and I hope you found this valuable today.

Carnivore diet + ribeye steaks! 🥩

Didn’t really know what I was getting into but so far so good and this is how I’m feeling:

🥩 Mental clarity is amazing!! (Translation: no brain fog, brain is litty!)
🥩 Feeling lean, not bloated
🥩 So far lost 2 lbs
🥩 Appetite is suppressed and easily satiated again by more meat
🥩 Not having my seasonings all the time is challenging
🥩 I do miss my fruits and veggies
🥩 Thought I was gonna be constipated but it’s the opposite 🙈💩 (That means your body is detoxifying!)

I’m liking the way I feel so far so I’m going to keep going! 🤩

To prepare the ribeye, heat up your pan super hot to get a good sear. A good sear locks in the flavor! Season with organic herbs or seasoning of your choice and sear for 2-3 minutes on one side. Then flip and baste it with Irish butter. Cook the other side for the same amount of time, take it off the heat and let rest. This wasn’t too thick so it cooked relatively fast and rested for 5 minutes. Cut on a bias (diagonal stroke) and finish with some salt if needed!

SPICES!!!

Spices bring so much life to cooking! Hang out with me as I unpack these special spices that my aunt brought me from Turkey!

These are some suggestions but I’m sure there are so many more uses for these!
Saffron - used for aromatics, color, popular in bouillabaisse, paella, arroz caldo
Cumin - great for meats, but also curries and carrots (check out my video on this)
Sumac - chicken, grilled meats, topping for rice
Oregano - versatile, great for chicken
Coriander (whole) - great for soup bases, pickling
Coriander (ground) - versatile for mostly anything
Mint - mix with olive oil, lemon, s&p for salad dressings or with yogurt for creamier dressings, toppings for vegetables
Red pepper and chili - great for soup based, marinades, sauces
Fennel seeds - also great for sauce based and seasoning for ground meats like Italian sausage
Tuzot - mixture of radish, celery, carrot, parsley and onion with some salts and other spices, probably good for a soup base

Where are my fellow fixers? 🙋🏻‍♀️

One of the most valuable things that I am learning in preparation for marriage is to be more in tune with my ability to empathize.

Empathy teaches us to feel, not to fix. While it’s admirable to problem solve, not everything nor everyone needs a solution to feel better. The ministry of presence is often underrated. more often than not, our presence is enough and it is a gift.

Empathy teaches us to join someone’s puddle, not yank them out of it. It also teaches us not only to sit with someone when they are going through a rough time, but also to celebrate their joys and the wins. Empathy shows up in both occasions.

Gauva + Dipping Salt

Join me as I make my favorite dipping salt for guava. I was saying sauce and dip but I really meant salt lol!

Have you tried guava like this? I attribute this dipping salt to a sweet tajin or the Hawaiian Li Hing Mui powder.

Who said match.com success stories weren’t true? 🥹

I told myself that if I ever got proposed to, that I would know if it was a ‘no’ and I would know if it was a ‘yes’ and Mike proposing was a resounding YES!

I instantly cried when he was speaking. I was just being silly making a toast and the slight change in the pitch of his voice made me wonder why he was all of a sudden serious. He kneeled down on one knee, opened the box, asked me to marry him and I just cried as I hugged him and said yes. Right after, I realized that he had planned the whole thing while the entire staff and wine tasters were in on it and I was happy and amazed and confused all at the same time haha. 🥰🤪

Mike, it should never take just a ring for me love you more, to commit to you more, to choose you everyday, to be intentional with my choice of words and tone towards you or to willingly make you happy. I cried because being with you showed me that apart from God’s love, even though ours will never equal His, that great love also exists on this earth and it exists with you. When someone isn’t fulfilling an expectation you had, ask yourself:
1. Did I communicate what I want/need from this person?
2. Was I clear in my communication?
3. Am I sure they understand what it is I mean?

This way, the person who is supposed to be “fulfilling an expectation” doesn’t feel pushed into a corner and attacked when they don’t even think that they’ve done something wrongly or inadequately.

Back with another unpopular opinion! 👋

The moment I realized my real treasure is in heaven, it was easier for me to not be so easily impressed by worldly things, possessions, people’s accolades, achievements, status in life, size of their bank account, etc.

Let's talk about this for a second.

It's not our job to tell someone how to feel given a situation or to tell someone their feelings aren't valid,
or to shame someone for feeling a certain way if it's different than how we would've felt in that same
situation. Emotions are valid!

Now, it's important to note that our emotions come from thoughts we formulate in our heads so it's
necessary first of all to get our thinking right. Trust me, it avoids a lot of unnecessary emotions!

When you're the "feeler" ask yourself:
• What if I let it go?
• If I act on it, will it help or hurt the situation?

When you're the person interacting with the "feeler" whose emotions you don't agree with/are annoyed
by/don't know what to do with, ask yourself:
• How can I empathize with them?
• Can I ask them if they'd like my presence/advice/opinion/thoughts/questions before just giving it?

We've played both roles I'm sure. It's easy to feel but letting go and empathizing are harder. We must

Is this you? Cuz there are times when this is me. Yes, I admit it. I can go from 0 to 60 coming up with all sorts of negative and self-deprecating talk as to why I’m not where I’m supposed to be.

What does that even mean anyway? The timelines we pressure ourselves with live in our own minds. It’s important to keep progressing forward without feeling the need to compete with who’s around you and the ‘successes’ they have. Trust me, you’ll be a lot happier when you practice this.

Calling all goal getters! 📣

What would you do if you knew? Trusting the process without marrying the outcome is so challenging and mentally/emotionally taxing sometimes.

But… what it also does is it also allows you to serve your audience genuinely and teaches you grit.

Seriously my least favorite chore and I hate it more the older I get. I also feel like I’m just cycling between hamper and laundry and things don’t ever go back to my closet. Forget the closet, “the chair” gets the beating most of the time 🪑 or, the other side of my queen bed as I carve myself a sliver of space for sleeping 🛏 lol. Happy Mother’s Day to all the beautiful and wonderful moms! 🥰 Our job is never easy and it always feels like we never have days off, so cheers to you for being amazing!

Did you know that the best milkshakes are ice-cream based? I mean it makes sense why they’re so good! 🤤

I wanted something that had the consistency and coldness of a milkshake minus the guilt so here’s my hack on a low carb milkshake!

Get your low carb/keto ice cream as your base, blend with some frozen berries, milk and a sweetener then top with your fave fruits! I didn’t measure anything, just blend to the right consistency. (And that is.. t-h-I-c-c, baby! 🤪)

For mine, I used:
Brownie a la mode
Cherries and berries blend
plant-based milk cuz I’m lactose intolerant
Light agave for just a touch of sweetness
Topped with blueberries and lemon zest 🫐🍋

I’ve never made this before but it made sense in my head and it completely worked! It was super delicious and would 100% make again.

4 low carb / keto-friendly recipes you’d want to save!

1. Braise fennel slices in butter, salt and lemon until tender. Crisp up some bacon and chop into small pieces. Let some cherry tomatoes kiss the hot pan with avo oil and salt. Assemble like an artiste and garnish with fennel fronds. Simple and delish!

2. Savory omelette torta with spring mix and chopped ham mixed in. Cook until desired doneness. Top with EBTB and a dash of soy sauce.

3. Bolognese with heart of palm noods from . Cook a mix of ground beef and pork and season with salt, pepper, beef bouillon, fennel seed, oregano. Cook down with garlic, carrots, onions and celery. Adjust seasoning with keto brown sugar, lemon juice and salt. I mix a can of diced tomatoes and tomato sauce. Cook down until fat separates, meat is tender and sauce is thick. Serve with cheese of choice, I used Parmesan.

4. Sauté chopped kale in coconut oil and garlic, add some ground beef, season with your favorite seasonings. Topped with cherry tomatoes, EBTB, red chili flake and phat crumbs from .

Gratitude! We can rest knowing that we have all that we need. 😌

A couple years ago I started journaling the negative thoughts that would creep in and I would write down things I would be grateful for on the column next to it. You will see that the positives will outweigh the negatives and there is A LOT to be grateful for.

Having a grateful attitude not only makes us happier, but it also makes us content. Social media is a big culprit and enabler for discontentment, so I’m today to remind you to stay in your lane and to stay in it happily. Focus on and love what you already have.

Mexico food photo dump!

We ate our way through Cancún and ’s hotel and parks. Some of the delicacies I tasted and enjoyed include huitlacoche (fungus that grows on ears of corn), chicatana ants, escamoles (ant eggs) and fried grasshoppers. I LOVE the variety of food, tastes and textures. Everything was vibrant, colorful, flavorful and fresh.

The Mexican cheeses were incredible, the prawns were sweet and delicious and the desserts were spectacular.

What other Mexican delicacies should I try next? My old coworkers who called me Chinita Latina would be so proud of me. 🤣

I was shocked even seeing my arms today! 🤩💪🏻

When I was younger, I used to be so insecure about my arms cuz my fats just decided to take residence there! 🤷🏻‍♀️

I’ve worked hard on my biceps, triceps and shoulders for a while and to see it pay off is amazing.

It’s definitely not a single-formula solution. It’s working out and taking the beating from my trainer (just kidding ) + eating better + supplementing with pure therapeutic ketones + biohacking through fasting. There is no quick fix. It is not an overnight transformation.

But what I do know is consistency pays off and working from discipline vs motivation are KEY!

I think we all play victim to the comparison game. Heck, I even play comparison to myself 10 years ago.

There are so many things to compare ourselves to — someone else’s success, physical appearance, bank account, health, personality, skills… the list goes on and on.

The moment you can accept where you are and surrender yourself, your progress and your next move to God, the same God who created the universe, who is molding you and co-authoring your story… you will be FREE of this unnecessary pressure.

We are unique, special and capable. Let’s focus on staying in our lane and using our stories to serve others. This is our purpose, all for His glory, so everyone can know His greatness.

Stop comparing yourself to others. He works all things for good. 😌

I used to hate the word ‘diet’ because it always had the connotation that you were currently not where you wanted to be. More often than not, it’s also because of the image we’ve created of ourselves from thoughts we formed all on our own, always striving towards standards WE came up with as to how to look physically instead of health being the number one reason.

The transformation here is more mental and physiological than it is physical. I thought that restricting myself of certain foods or going to the extreme of doing things like the master cleanse were the quick fixes to my body dysmorphia.

Later on in life, I found ways to bio-hack my life and regain that energy, mental clarity and ways to lose fat in a more sustainable way. When you find something that works for you, backed by science and not encapsulated by some shady white pill with a name you can’t pronounce from a “weight loss center” you don’t even know you’re signing up for, you stick to it because you actually FEEL the changes.

Yes this after photo was taken in Mexico just last week, with a rolled nutella crepe and chocolate and vanilla ice cream. If I told you that I was still in fat-burning mode even though I was eating this, would you believe me?

Well, it’s possible and it’s possible for you! ✨ And the funniest thing is that it’s not some big secret. You just don’t know it yet that you can find something that works for you, lets you enjoy food (just don’t be a jerk about it, okay?), and continue to have high energy, superior mental clarity and fat loss. And if you’re an older millennial like me, sometimes that’s all you need to get through the day. That’s why I’m sharing it with you because I want you to experience it, too!
