๐ŸŠ Orange Poached Salmon

April is that month where you start wanting food that feels a little lighter โ€” but still satisfying.

More daylight.

More movement.

And a desire to feel energized without feeling deprived.

This Orange Poached Salmon is one of my favorite spring meals because itโ€™s:

- High in protein to support muscle and metabolism
- Rich in healthy fats for hormone production
- Gentle on digestion
- Fresh, bright, and surprisingly simple

Itโ€™s elegant enough to feel special, but easy enough for a weeknight.

๐Ÿฝ Orange Poached Salmon Recipe

Youโ€™ll need:

- 4 skinless salmon fillets (about 1 lb)
- Juice of 1 lemon
- Juice of 1 orange
- 2 tbsp coconut aminos
- 1 cup water
- 2 tbsp fresh parsley, chopped
- 1 tbsp melted grass-fed butter
- Salt & pepper, to taste

How to make it:

- Rinse salmon and pat dry.
- Mix lemon juice, orange juice, and coconut aminos. Set aside ยผ cup of this mixture.
- Pour the remaining mixture and water into a large skillet and bring to a boil.
- Add salmon, reduce heat, cover, and simmer 8โ€“12 minutes until flaky.
- Mix reserved liquid with parsley, melted butter, salt, and pepper.
- Drizzle over salmon and serve.

Pair it with:

- A simple salad
- Quinoa or rice
- Roasted or steamed veggies

Sheโ€™s a chief nurse for an ambulatory care medical group.

Always on the goโ€ฆ patients, a team, nonstop responsibility.

And stillโ€ฆ she chose to show up for herself.

Itโ€™s vibrant, green, and incredibly versatile โ€” and it sneaks in hormone-supportive ingredients without feeling like โ€œhealth food.โ€

โœจ Why this one works so well in March

- Supports digestion and liver health
- Provides healthy fats for hormone production

๐ŸŒฟ Emerald Pesto Sauce Recipe

Youโ€™ll need:

- 1 can garbanzo beans, rinsed & drained
- 2 tbsp lime juice
- 3 tbsp extra-virgin olive oil
- 1 tbsp water
- 2 small garlic cloves
- 1 tsp sea salt
- ยฝ tsp black pepper
- 1 cup fresh spinach
- ยฝ cup fresh cilantro
- ยผ cup fresh parsley
- 3 tbsp sliced green onions

How to make it:

- Add garbanzo beans, lime juice, olive oil, water, and garlic to a food processor. Blend until smooth.
- Add salt and pepper and pulse briefly.
- Add spinach, cilantro, parsley, and green onions. Pulse until combined.
- Taste and adjust seasoning. Chill before serving.

Use it as:

- A veggie dip
- A sandwich or wrap spread
- A topping for chicken or fish

Fibromyalgia. IBS. And still 6 pounds down: Meet Natasha. ๐Ÿ’ชโœจ

For several years, Monica was frustrated.

She was eating healthy.

Exercising consistently.

Doing everything she thought she was supposed to doโ€ฆ and yet she couldnโ€™t lose weight. In fact, she was gaining.

Then life threw something much heavier at her.

Her husband was diagnosed with cancer.

She made the decision to leave her job so she could be by his side.

The holidays were approaching.
