I hope this finds you and your loved ones safe and well! I don't know about you but the changes over the last month have had me on edge, you know a little anxious. I have 2 things to share with you;

2) I believe we all go through times where comfort food makes everything better. It might be a long day at work, social gathering, or as we’re experiencing today a national emergency. However, when I eat real good comfort food I think of my mother, MaryAlice (I had her for 53 years) and know everything is gonna be alright. So during this pandemic we are in, I wanted to share with you one of my favorite recipes she made. Over time I have modified the recipe to my taste. I hope you enjoy it! Bret
Brunswick Stew by MaryAlice
Cut beef and pork in small pieces and dredge in a flour, salt and pepper mixture (I use a crawfish skimmer to keep the flour mess to a minimum when transferring to the skillet). Brown beef and pork in skillet with oil.
Put the meat in a large pot (set skillet to the side you’ll use with chicken), add cubed potatoes, chopped onion, crushed tomatoes (Rinse crushed tomatoes with about a half cup of water), ketchup, Worcestershire sauce, and mix well. Cover and cook on low heat for 1 hour. Put chicken in skillet (add additional oil if needed) and cook, when done remove and chop or shred it. Then add peas, corn, and chicken to the pot, mix well and cook covered for 30 minutes.
Yields 8 servings.
Ingredients:
14oz beef stew
12oz pork steak or pork chops 14.5oz can crushed tomatoes
¼ cup ketchup
¼ - ½ cup flour
8.5oz or 15oz can peas, drained (use 15oz if you love them like I do) 8.5oz or 15oz can yellow corn, drained
2- potatoes
4-6oz of chicken breast 1 medium onion
Salt and pepper to taste 2-3 tablespoons of oil
The above was my mother’s recipe, however, I’ve modified it which I’ve listed below; I buy skirt or strip steak, easier to cut and has better flavor
I use 1- 14.5oz and 1- 8oz can crushed tomatoes and rinse with about a ¾ cup of water because I like the hearty broth
I use my favorite BBQ sauce instead of Ketchup I buy 2- 15oz cans of cubed potatoes
I also add 4oz of sliced mushrooms, drained (add with corn, peas, and chicken)
I also add ¼ cup of shredded or sliced carrots (add with potatoes, onions, tomatoes) 1 medium jalapeno, chopped (add with potatoes, onions, tomatoes)
1 teaspoon of minced garlic (about 2 small cloves, add with potatoes, onion, tomatoes) At times I substitute baby lima beans for the peas
