- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested

Instructions:
1. In a bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, dried oregano, salt, and pepper to create the marinade.
2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
3. While the chicken is marinating, rinse the quinoa under cold water and drain well. In a saucepan, combine the quinoa and water or chicken broth.
