My Banana Muffins are soft, sweet, and almost taste like they are banana nut muffins because of the flax in them. They remain even lower-carb because they use banana extract vs. bananas themselves.

They are nutrient dense and perfect for a quick grab-and-go breakfast, lunch, or snack! You could even add a few low-glycemic chocolate chips to each one. I make them in mini-muffin parchment paper molds so that it feels like I can eat more, and they cook well.

Jicama is one of those underrated gems! 🥰 It’s crisp, slightly sweet, super refreshing, and packed with fiber and vitamin C — all while being low in carbs and calories.
