Before I started eating this way, oatmeal was one of my favorite foods for breakfast, and I loved Maple and Brown Sugar in it or a large quantity of blueberries. Once I realized how many carbs and sugars I was starting my day with, I made a shift, and had to create my own high-protein, low-carb version. I like to break it into portions to make for a quick grab breakfast or lunch.

This is so good and can be “doctored up” in so many ways, whether with brown monk fruit or allulose and maple extract or maple low-glycemic syrup, or with cinnamon and sweetener, or a small handful of berries or even some pecans. It’s even a great way to break your fast midday.

Trying my Butter Chicken Pizza 🍕

This one is a little more labor-intensive, but every single step is worth it. The Butter Chicken Pizza starts with a savory chicken and spinach crust, seasoned with warm butter chicken spices that already make your kitchen smell incredible. The sauce is a win on its own—you’ll have enough to spread over the pizza, plenty for dipping, and even extra to pour over any leftover chicken you made.

I added extra spinach on top because I love that fresh, earthy bite with the rich, spiced flavors. You can also pre-make the sauce or even the crust ahead of time, which makes this much more doable. The end result? Absolutely delicious, comforting, and so satisfying. Have you tried butter chicken before, or is it one of your favorites?

My Almond Flour Cheese Bagels are so delicious and the perfect replacement for high-carb bagels. They are soft and chewy and can be used for any meal of the day; perfect for part of a grab and go breakfast, lunch, or snack. You can eat it with my Strawberry Chia Seed Jam, with deli meat, as an egg/bacon/sausage sandwich, with pepperoni as a pizza bagel, or even with peanut or almond butter.
