I had this for lunch any let me tell you it was so delicious INGREDIENTS
Kale pasta salad
3 cup pasta
6 cups kale roughly chopped
1 cup sun dried tomatoes
1 cup shredded parmesan cheese
0.75 cup crumbled feta cheese
For Garlic Basil Dressing :
1.5 cup fresh basil stems removed
0.75 cup extra virgin olive oil
4.5-6 tsp white wine vinegar
9 cloves fresh garlic
0.75-1.5 tsp salt
Fresh cracked pepper
Cook Pasta: bring a large pot of salted water to a boil, and cook pasta according to the directions on the package. Drain pasta and allow to cool slightly before mixing into salad.
Make Dressing: add all dressing ingredients to a food processor or blender. Run on high until ingredients are fully blended. Taste dressing and add more salt if needed. Refrigerate dressing until ready to use.
Mix Salad: add a touch of oil to roughly chopped kale and gently massage leaves between fingers for 1-2 minutes to tenderize. Add kale, sun dried tomatoes, feta, parmesan, and pasta to a medium mixing bowl. Pour dressing over salad and toss to combine. Cover and refrigerate at least 1 hour before serving. Kale pasta salad
