Over a decade in this business, I also received my Masters in Nutrition, so I now work as a certified nutritionist as well as a health support of chef. My name is Michele... I want this soup, a big blanket, and approximately 47 episodes of Gilmore Girls. Coconut Curry Yellow Split Pea Soup with Thai White Rice Recipe 🍛🥥

Ingredients:

2 TBS EVOO
1 onion, small diced
1 carrot, small diced
1 stalk celery, small doced
1 TBS ginger, minced
2 tsp salt (plus more to taste)
1 TBS of curry powder
1 TBS ground cumin
2 tsp turmeric
1 tsp chipotle in adobo
1 tsp smoked paprika
1 tsp freshly ground black pepper
1 tsp crushed red pepper
1 cup yellow split peas (you can also use red lentils if you want)
8 cups broth
1 can full fat coconut milk
Juice of 2 limes

Add ons:

3 cups cooked Thai white rice
1 tsp sesame seeds
1 tsp sesame oil
3 scallions, finely chopped
Handful of parsley or cilantro (optional, but encouraged)

Instructions:

In a large pot, heat the EVOO on medium heat for one minute.

Sweat the onion, carrot, celery, ginger, salt and all of the spices in the olive oil first 5 minutes.

Add the lentils and stir. Add the broth and the coconut milk and then cover and simmer for an hour.

Adjust seasonings (I added a significant amount of salt at this stage).

Take off heat, add lime juice and stir.

Add 1/4-1/3 cup of cooked Thai Rice to soup bowl. Add soup on top. Top with a drizzle of sesame oil, sesame seeds, scallions and either parsley or cilantro.

Notes:

* I used frozen rice that I heated in the microwave to save time and eliminate the need to wash another pot

* I used “no-chicken chicken stock”, but regular chicken stock or bouillon would work too.

* My mom and the hubster put shredded rotisserie chicken into their soup for added protein, and they loved it.

Sun, Food & Soul Feeds in Cartagena🇨🇴

1. Last August in Cartagena, I had the honor of officiating my dear friends and wedding. I showed up in pink, toasted with coconuts, and cried happy tears under the Colombian sun. 🌞🥥

2. Today is Behman’s birthday, and I’m still not over this radiant weekend. We all traveled down to celebrate love, danced until it was blurry, and wore every shade of joy.

3. We devoured plant-centered meals in the most unexpected places — tacos layered with pickled mango, spiced tofu, fresh herbs. The kind of food that feels as joyful as it tastes. 🌮💃

4. Cartagena is a city that feeds you — color, rhythm, warmth. Every corner felt like a hug. Every street, a celebration.

5. And this? A personalized roast for the bride + groom. 100% Colombian beans, 1000% heart.✨ Natalie & Michael — roasted with love. ☕️❤️

6. The made the perfect backdrop for our laughter and poolside fun. It felt like magic wrapped in bougainvillea.

7. I fed my stomach — but I fed my soul even more. And that’s the kind of nourishment I want to carry into every season of life. This was taken right before we got caught in the rain. The dramatic kind. But also the run-laugh-spin-hug-it-out kind. We didn’t care. It was magic.

8. Here, nourishment comes in many forms: music, movement, mangoes, and moments that stick with you long after you leave. Color everywhere. Music in the streets. A long weekend soaked in meaning.

10. Our first time away from both our kids and it was for 4 days. Big moment.

11. The main event, the heart of it all.
Natalie & Mike, you brought us to Cartagena for a wedding — and gave us an experience we’ll never forget. A ceremony that was sacred, a party that was wild, and a love that radiated in every detail.

12. We fed our stomachs. We fed our spirits. And we left Cartagena glowing— mostly with sweat.

The Dirt on our May… it was a blur of sticky fingers, loud laughs, shared plates, and full hearts. Swipe to see the chaos, the cuddles, and the crucifers 💕🌮🥦
1. My happy place. Built this green dream kitchen from the ground up and it still makes my heart skip.
2. Fancy Philly. A sweater vest and spring air — the boy cleaned up nice.
3. 18 months of my sweet nephew. Celebrated in the kitchen that keeps on giving.
4. Mother’s Day tea. Talia, my mom, and me — sharing the sweetest preschool moment.
5. Sam’s cardio = pushing 3 kids uphill. All smiles, mostly.
6. Silly Wolfson girls.
7. Matching firefighter hats + holding hands = heart explosion.
8. Cousin love. Talia and Lane marveling at Carrie’s baby bump (7.5 months and glowing).
9. Field Day energy: chaotic, colorful, completely Talia.
10. Still in yellow, still going strong. We both showed up for Field Day like sunshine.
11. Philly + Bubbie. The queen herself, holding it down with us for 4 days and still snuggling strong.
12. A baby kangaroo (!!) throwing parties that make core memories.
13. Sam and Talia at dinner = peak goofball hour.
14. Philly: heartbroken to learn cousins can’t also be girlfriends. He’s working through it. He loves Carrie.
15. Our annual spa cousin photo— a tradition I love (missing 2 gals this time, but hopefully never again).
16. My mom winning the bridal shower quiz like it was a game show. Proud daughter moment.

Dance recital AND Santa AND a train show in one morning/afternoon?! So much fun! No pictures of Philly boy because he’s not ready for Santa or a dance recital yet, but he had quality time with uncle Matt today ❤️. He much preferred to sit on uncle Matt’s lap and read llama llama 25,000 times.

We are so proud of our bunny girl. Sam and I ugly cried as she danced on stage and Tali was so kind to her cousin Levi, especially when he was nervous on Santa Claus. She went right over to keep him company and told me she wanted to “make him feel safe.” 🥹

This makes me excited for the week ahead!

What that being said, I’ll still take some eggnog and Christmas cookies too (oh, and don’t forget the latkes), but I try to meal prep ahead of time so I can get in all my veggies without sacrificing flavor.

The food goes fast over here. We had eight adults and three kids on a Monday night, so I have to keep everyone nourished and happy!

“The seaweed is always greener in somebody else’s lake” is how the saying goes, but I feel pretty damn lucky to be here in the now with my Disney themed crew (the little mermaid and 101 Dalmatians).
