Chinese Chicken and Broccoli!

-1 pound of boneless, skinless chicken breast, sliced into bite sized pieces
-2 cups of fresh broccoli florets
-2 tablespoons soy sauce
-1 tablespoon fish sauce
-2 tablespoons avocado oil
-1 tablespoon cornstarch
-2 cloves of garlic, minced
-1 teaspoon of ginger, minced
-Salt and pepper to taste
-organic brown rice (optional)

-Marinate the Chicken: In a bowl, combine the sliced chicken with 1Tbsp soy sauce and cornstarch. Allow it to marinate for about 10-15 minutes while you prep your veggies.
-Stir-Fry Vegetables: Heat 1 Tbsp of oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Toss in the broccoli florets and stir-fry for 3–4 minutes until they turn bright green and tender-crisp. Remove from the pan and set aside.
-Cook Chicken: In the same pan, add the remaining tablespoon of oil. Add the marinated chicken strips, ensuring they are evenly spaced. Cook for about 5-7 minutes until golden brown and cooked through.
-Combine and Sauce It Up: Return the broccoli to the pan with the cooked chicken. Add oyster sauce and second tablespoon of soy sauceand stir well to combine. Cook for another minute, allowing the sauce to coat the mixture evenly.
-Serve and Enjoy: Once everything is well combined and hot, transfer to a serving dish
Serve immediately with steamed rice

Green Chile Chicken Enchiladas!

-1 tablespoon EVOO
-2 coloredbell peppers, diced
-1 lb ground chicken
-½ teaspoon salt
-½ teaspoon black pepper
-1 teaspoon garlic powder
-1 teaspoon paprika
-½ teaspoon cumin
-1 can black beans
-1 cup plain Greek yogurt
-1 (15 ounce) jar or can of green enchilada sauce
-Almond flour tortillas
-Mexican cheese, to taste

-1 lb ground chicken
-1 Tbsp extra-virgin olive oil
-1/2 small onion, diced

It’s finally starting to feel like fall and I have the perfect, simple homemade chicken noodle soup for a nice chilly evening! 🍁
-8 cups chicken stock
-2 large boneless, skinless chicken breasts
-1 large carrot, diced
-1 celery stalk, diced
-1 Tbsp EVOO
-1/2 teaspoon ginger, minced
-1 clove garlic, minced
-2 oz brown rice noodles
-sea salt and pepper, to taste

-heat olive oil in a large soup pan
-add minced ginger and garlic and stir often until warm
-add chopped carrots and celery. stir until soft
-add chicken broth and chicken breasts
-Bring to a boil, then reduce the heat and partly cover simmering for about 20 minutes or until chicken is cooked through
-remove the chicken, shred it, and add it back to the soup
-add the noodles and simmer about 4 minutes or until noodles are soft
-add salt and pepper to taste

My story

I have always been passionate about exercise so once my kids were in school, I became a certified group fitness instructor. I was teaching weight-based group classes and yoga classes each week but never paid much attention to what I was eating. During this time, I became very sick and was diagnosed with a thyroid autoimmune disease. I was told that I would have to be on medication to control my thyroid levels. After a year of trying different thyroid medications to relieve my symptoms, I wasn’t feeling any better. I decided there had to be another way. I researched my condition in depth and learned one of the most important things I could do for myself was to pay attention to what I put IN my body. I cleaned up my diet and felt immediate results. After several months of sticking to a healthy food plan, daily exercise, and a lot of rest/meditation, not only were most of my symptoms gone, but my thyroid levels were back in the normal range and I was able to get off thyroid meds. Most people don’t realize how food choices each day affect their health- how you feel today, tomorrow, and in the future. After years of working in a gym and talking to people of all different ages, sizes, and backgrounds about their health, I was surprised at how many people don’t feel good on a daily basis. Some are concerned with their weight, others have joint pain, fatigue, restless sleep, or food intolerances. I knew that many of these symptoms, like mine, could be solved with nutritious food and exercise and I wanted to help! I did more research and learned about a Health Coach certification program through ACE, one of the leading fitness education organizations in the country, and became a certified Health Coach. My office is located inside Next Level Fitness and Training in Westerville. I have made helping others my mission.

I partner with clients to develop individualized, balanced weight-management programs. My personalized programs are meant to last a lifetime. There is no fad/crash dieting and no over-the-top exercise routines. I provide weekly face to face meetings and virtual meetings to discuss goals, complete body composition assesments, educate about food, and have a personal training session.
