Sometimes less is more…
Whipped Ricotta perfect for summer and always a crowd pleaser:
8 oz fresh whole milk ricotta
1 Tbsp extra virgin olive oil
1 tsp honey
Zest of one lemon
Chopped Fresh herbs-I used scallions, Italian parsley, oregano and thyme
Salt, pepper, and garlic to taste
Whip all together with hand mixer, place in bowl and drizzle with a little extra olive oil on top and pronto! That’s it, you’re done. Easy-peasy.

I’m not sure what this dip is called but I know it pairs perfectly with Mexican inspired crudités ;)
Just mix together the following:
1 block cream cheese, room temp
1/3 C sour cream
1/2 tsp cumin
1/2 c your favorite chunky salsa (spicy for me 🌶)
1 C shredded Mexican mix cheese
1/4 cup chopped cilantro
4 ounce can chopped green chilis
Juice of 1/2 lime
Cracked pepper
Ole! 💃🏻
