Purim sameach! As the story of Purim commemorates the survival of the Jewish people in the Persian Empire from extermination, it’s only fitting that we indulged in this rice dish, which was inspired by 😍

As everything that I do, it was last minute and no much prep or thought went into the idea, for what this was a less crunchy , - Persian rice with a crunchy top- and I had to used regular rice, as I didn’t have basmati. But all an all, it came out pretty good!

Beans: the OG plant-based protein powerhouse! 🌱💪 These versatile and affordable gems have been fueling our plates long before the rise of fake vegan burgers. Whether you’re exploring a plant-based lifestyle or simply want to boost your protein and fiber intake, beans have got you covered. No mystery ingredients, just pure goodness!

🥗 Simple Bean salad 🥗

*you can use canned beans 🫘 but know that freshly cooked beans are WAY superior when it comes to flavor and texture.

Ingredients:
1 lb beans of your choice (makes extra)
1 small bunch fresh herbs such as parsley, leaves and tender stems, finely minced
2 garlic cloves, finely minced
Zest from 1 (unwaxed) lemon, finely minced
Salt and freshly ground pepper
Full-fat Greek yogurt
Extra virgin olive oil
Crusty bread, for serving

Directions:
1. Prepare the beans: Place beans into a cooking vessel of your choice.
2. Cover with water and cook according to the Beans cooking guide. Once tender, remove from heat and set aside.
3. Make the gremolata: Combine parsley or other herb, garlic, and lemon zest in a bowl and season to taste with salt.
4. Serve and enjoy: Serve beans in bowls with the bean broth, topped with gremolata, Greek yogurt, olive oil, and more salt to taste. Dig in with a spoon or a slice of fresh, crusty bread.

I’ll admit it: I’m really not that great with my phone. I’m not proud of it, but sometimes text someone about something and forget about it, so I wont even see their response! 🤭 Yes, techy stuff is always keeping me on my toes! Also I don’t like to be on the phone while trying being PRESENT with my kids and family, so I promised to be on my screen a little less during daytime thought, I also promised myself to post more and consistently… Tricky right? Maybe I’ll start sharing more later in the day, past bedtime. Would you still be there to hang out? 🤪

It’s a hard balance because I love connecting with you in social media and through the phone is how I coach my clients.

How do you limit the time you spend on technology? I’d love for you to share your suggestions in the comments for a more present, tech-free day!

How do you embrace the new season? It’s always been my nature to run through the days filled with to-do’s and my long list of "projects" to then realize that time flew by. As we begin to embrace the new season, I find myself excited for summer and all its FUN! Saving some special time for visiting Farmers Markets, new cute towns to stroll by with a cup of cold brew and morning trips to some type of body of water on the days that I'm not working at Camp. In that spirit, I’m challenging myself to slow down and appreciate what’s in front of me. What about you, what are you looking forward this summer?

Instead of cutting out all the junk food, try to INCORPORATE MORE whole foods into your meals. Maybe start by swapping a sugary snack for a piece of fruit.

Nachos 🌮 will come but the pre time is when everyone is the most hungry, AKA best time to set up a lovely, colorful *platter of goodies!

You’ll see it disappear in front of you eyes! And you’ll be amazed. Also it curves your appetite for the later meal.
