Blueberry oatmeal muffins and “Dinosaur Juice” for a pre breakfast! A hit w kids and adults alike 😊🙃
Rough recipes:
“Dinosaur Juice”
3 cups water
1 tsp minced ginger or could through in a chunk of fresh if you have
Spring of parsley
Sprig of mint
1-2 apples (we mix between Granny Smith and pink lady)
2-3 inch celery (I cut a stalk in 3rds/4ths and put them in a freezer bag)
2-3 inch of cucumber
1 lemon peeled
2 C frozen raw spinach
Absolutely need a high speed blender for this and recommend drinking w a straw. Makes about two adult portions and two kids portions.
Blueberry Oatmeal Muffins
4 very ripe bananas mashed
1/2 cup almond butter
1 tbsp baking powder
1/4 tsp salt
1 tsp lemon extract
Juice of one lemon or two tablespoons
1/4 c flaxseed meal
2 cups oats blended into flour
1/2 cup almond flour
~3/4 C soy milk (I start w 1/2 and add more if needed to get a scoopable batter)
2 C blueberries (I defrost frozen ones)
Mix the smashed bananas w salt and baking powder, then add almond butter, then flaxseed powder, then rest of ingredients w blueberries last.
