Before I begin, always consult your doctor or physician before you make any changes that has been put in place for your health.
I offer information, knowledge and support that is centered around nutrient-rich and nutrition-dense foods.

Lets chat about eggs.
I know eggs get a bad rap as a high cholesterol food, but do you know that our body makes and uses cholesterol.
Cholesterol is ā€œbadā€ when foods that are high in saturated fats and trans fat are consumed often, a low active lifestyle, and even genetic disposition — but that’s another discussion at another time.

Eggs are nutrient-dense, high in protein, vitamins and a few trace minerals that supports our health and guess what — it’s okay to eat the yolk šŸ˜‹ which helps our eye health.

Vitamin A / supports eye health
Protein (satiety) / weight management
Choline (B vitamin group) / builds cell structure
Vitamin D (yolk) / bone health
Antioxidants (luetin and zeaxanthin) / eye health

One egg contains a number of nutrients our body needs and number of health benefits that I didn’t list.

Have you had your omega-3 or beta-carotene today?

Salmon
-Great source of protein and potassium.
-High in omega-3 fatty acids / lowers BP
-High in B vitamins / controls inflammation

Kale
-Prebiotic
-Great source of vitamin C and vitamin K1
-Rich in antioxidants / counteracts oxidative damages
-High In beta-carotene / converts to vitamin A

Salmon and kale both provide a number of nutrients and trace minerals. Both are delicious and can be prepared in different ways.
I sautƩd the salmon in olive oil, fresh lemon and sea salt and added the kale to lightly steam as the salmon finished cooking.
