Get Fit With 6: Nutrition Month Get Fit With 6: the focus this month is on nutrition.
I made some delicious pulled Mexican style chicken last week using my crockpot. It was super easy to make and very tasty!
Here is the recipe 👩🍳:
Ingredients:
4- boneless & skinless chicken breasts
1- 14.5 ounce can of diced or fire roasted tomatoes
1- 14.5 ounce can of whole kernel corn
1-14.5 ounce can of black beans (drained and rinsed)
2 - 3 chipotle peppers in adobo
1 Tbsp chili powder
1/2 Tbsp ground cumin
Salt & pepper to taste
Spray the bottom of the crockpot with olive oil. Place the chicken breasts at the bottom. Pour all of the ingredients on top of the chicken and then cover. Cook on low for 4 to 5 hours or on high for 1 to 2 ½ hours.
Once the chicken is done, shred it using two forks or a hand blender.
Using some of the chicken, I put together taco bowls made with brown rice, light sour cream, avocado & cheddar cheese. 😍 The rest of the chicken was used on another night for burritos.

Last weekend’s breakfast consisted of mango, turkey bacon, whole grain English muffin with jelly, & scrambled eggs made with sautéed spinach. 😍 Breakfast doesn’t always look this elaborate (because life) and it doesn’t have to be. Breakfast can be as simple as peanut butter toast. What is important is that you’re fueling your body with some sort of nutrition to help jump start your day. Research has shown having breakfast can help with concentration, memory, & help aid in blood sugar control.
