Salted Caramel Banana Muffins
Yield: 12 muffins | Total Time: 25 minutes
Wake up to the aroma of freshly baked muffins! These Salted Caramel Banana Muffins are naturally sweetened with coconut sugar and bananas and offer a hearty protein boost from our Life Shake.
Ingredients:
4 large bananas
1/2 cup coconut sugar
1/2 cup coconut oil
2 eggs
1/2 cup oat flour
1.5 cups Salted Caramel Life Shake
1/2 tsp baking soda
1 tsp baking powder
1 tsp pure vanilla extract
1 cup sourdough starter
1/2 cup nuts of choice (optional)
1/2 cup chocolate chips (optional)
Directions:
Preheat oven to 350°F.
Mash bananas and mix with coconut sugar and oil.
Beat in eggs, flour, protein powder, baking soda, baking powder, vanilla, and sourdough starter.
Fold in optional nuts and chocolate chips.
Pour batter into a muffin tin and bake for 15 minutes. Enjoy warm!
