Enjoying an impromptu lunch
I really wanted to get a cannoli, but James did a good job keeping me in check with a more middle of the road approach and I settled for a croissant instead 😆
We noticed that the service was very efficient today and it seems that it’s thanks to some new crewmembers including Andrea who helped us out today. Very happy to see one of my favorite cafés just became even better!

15 YEAR ANNIVERSARY!!! ❤️❤️❤️
We originally wanted to take a more “exotic” trip for this anniversary, but with things changing everyday due to COVID we found it easier to plan a more local celebration.
It’s kinda representative of marriage altogether… you plan one thing, things change, but if you work together you make it awesome anyway!

I really believe traveling is part of a healthy lifestyle. It challenges your ideas of what everyday “normal” is or can be. And while travel to a foreign country might be more impactful, the effects of travel to nearby cities and states should not be discounted 😁

Hiking in Rocky Mountain National Park a few years ago. Every time I look at this photo I remember how insanely quiet it was out there.
The peacefulness was remarkable. And while I can’t teleport myself back to Colorado to enjoy it, it does reminded me to appreciate those rare moments of silence and calm whenever and wherever I find them.

Celebrating my grandma’s 95th BIRTHDAY 🥳 🎂🎉!!!
We had a nice celebration with dinner, cake and family last week ❤️
Every time her birthday comes around I think to myself “how will I be at that age?” And my answer this year is functionally fit (meaning I’m able to physically get around by myself without much restriction), and creating art.
I used to draw a lot when I was a kid/ teen, and while I haven’t done it for a long time, I hope one day to start up again. Seems like something great to do when I’m hella old like my Abuela! 😝

Healthy meal with MINIMAL COOKING skills needed!
Todays lunch was a BIG mixed green salad with 🥑 and green 🍏, cod on a bed of black quinoa, and a fresh berry bowl for dessert!
The only thing that required actual cooking was the cod. And the was super easy: just defrost, cover both sides in avocado oil, sprinkle with some black pepper and coriander and toss in the air fryer for about 15 minutes!
Salad consisted of mixed baby greens (with an emphasis on arugula), green apple, avocado, red onion, and green pepper.
Salad “dressing” consisted of fresh ground salt and black pepper, a little lemon juice from a fresh lemon, and olive oil. (NO pre-mixing or measuring required, just layer each one on top of the salad)
Quinoa comes in different colors and each one is slightly different. My fav right now is the black quinoa, but all are pretty yummy. Cook according to directions on bag.
Berries can be chopped or left whole. Add nuts or seeds to step it up a notch!
What I love about this meal is that you can make EXTRA for the next day! Pre chopping some extra veggies saves time, and using the air fryer to reheat the fish ensures it’s not gross from the microwave, quinoa reheats nicely in the microwave or anywhere really.

I just love this guy! 🥰🥰🥰
While James and I were very lucky to have suffered very little during lockdown, I did notice that living and working from home 24/7 seemed to accelerate our (or mostly my) bad habit of substituting quality time together for TV time together.
But now that things are getting back to normal, we are taking advantage and prioritizing meaningful activities outside of the house.
And its been REALLY NICE!
Just like with other areas of health, relationships have to be nurtured and maintained.

There is nothing like leaving your home county ✈️ to really get your brain 🧠 firing on all cylinders!
I spent last week in Mexico City 🇲🇽 and I was quickly reminded of how much I don’t know about the this vast and diverse world that we live in. I visited the Teotihuacan pyramids, the Museum of Anthropology, ate authentic Mexican food that I had never had before like cactus 🌵 salad, visited the Basilica of Our Lady of Guadalupe (One of the most important pilgrimage sites of Catholicism), and even witnessed a women’s march and demonstration on International Woman’s Day, in person.
With so much “new” around me, my brain had no choice but to light up with curiosity🤔.
There are lots of things we can do every day to keep out minds engaged and young, but I can’t emphasize enough the importance of stepping into new worlds whenever the opportunity arrises. 🤩 New environments challenge your brain but they also challenge our beliefs and biases.
What are your upcoming travel plans this year? 🧳🛳✈️
