Hi guys, how are you feeling today?

We’ve been quiet for a while on here, but we’re coming back!

Looking forward to share more insights into Plant Based Nutrition and lifestyle, as well as other practices we consider important to lead a wholesome life, while spreading love and creating abundance.

During this long hiatus, Fran went back home to Uruguay and started his own plant based food company. He also had a kid with his beautiful partner (Teo is 10 months now). Excited to share how to raise a family following a PB diet.

Tiago and Ellen also started their own business, a wholefoods plant based cafe in Wainui, New Zealand .wainui while continuing to grow their photography & video business together.

We have been taking care of our health and improving our reality in many ways and would love to slowly share with you all.

Why you do what you do?

My plant based journey started with health benefits. That is how I got interested in the first place, and after 5 or 6 hours of documentaries I took the decision to go ALL IN. Yes the cold turkey way. I used to be a big meat eater before that… I was born in Uruguay where the meat and dairy industries are the biggest industries back home. So yes it was very difficult at the beginning, especially in my country where you could not find many options 😊

I realised having a strong reason for making the change was what led me to keep my vision about this lifestyle.

Why am I following a plant based journey?

🌱For the animals
🌱For the environment
🌱For my health

Hey all! 👋🏻 We thought would be a good idea to introduce ourselves again as we noticed new people started following the page 😊✨

So this is one of the faces behind the energy spread through Plant based Community 🌱

My name is Fran, I am 24 years old and I come from Uruguay 🇺🇾. I am a certified Plant based Nutritionist 😀🌱 I am a super active person, love to hike, run and do yoga. I also enjoy travelling, and have been doing it non-stop for the last couple of years ✨

I have been on a plant based diet for almost 4 years now and things are just getting better and better: my energy levels have increased exponentially, my focus has improved, and the fact that I started to align my actions with my values kept me motivated to spread the word.

For those who are just getting started I just want to let you know that even though it is a process and takes time, the plant based journey is just a positive one 😊🍃🙏🏻

Something I found really important while following a plant based diet (or taking an important decision really) and stick to it is to have a clear WHY. So why is that you are plant based or want to transition to a plant based diet? Health, environment, animals? Maybe the 3 of them. Have this clear and write your WHY in a piece of paper. Believe me, this will help you heaps to keep you on track.

Following a plant based journey is not as easy as cutting out animal products and that’s it. I have to be honest. But when done right... you will expand.

So I just want to let you know that I am here to help and guide you through this path. Hope you enjoy it the same way I do.

Pumkin Soup - Vegan + GF - 25 min

INGREDIENTS

- 1 Tbsp Coconut Oil
- 1 Onion (chopped)
- 2 Cloves Garlic (crushed)
- 1 tsp Ginger finely chopped
- 1 tsp Thyme
- 1/2 tsp Cayenne Pepper
- 9 cups (1kg) Pumpkin (peeled and cubed)
- 2 cups Vegetable Stock/Broth
- Salt and Pepper to taste

INSTRUCTIONS

1. Add the coconut oil to a pot with the chopped onion, garlic and ginger and sauté.
2. Then add the thyme and cayenne pepper and sauté until the onions are softened.
3. Add in the vegetable stock and the pumpkin and bring to the boil.
4. Turn down the heat and simmer until the pumpkin is soft and cooked (around 10 minutes).
5. Use an immersion blender to blend it smooth inside the pot. If you haven’t got an immersion blender, then transfer to a blender jug in stages and blend until smooth.
6. Add salt and pepper to taste.
7. Serve with some pumpkin seeds on top and whole grain bread

Questions to ask yourself…

I think it’s so important that every now and then we stop for a minute, and take some time to connect with ourselves and evaluate our journey.

Just take some time to think about your life and what kind of reality you want to create for yourself.

These are some questions that could help in guiding you in the right direction of where you want to head with your life.

Try to write down the answer of one of these questions TODAY. It’s important to have a clear vision of where we want to go and what we want to achieve. From the moment you start to visualize yourself and feel that an event is already happening it becomes reality...

Get to know yourself, explore every corner within you and set priorities.

Here are a few practices that we love and hopefully will help you!

I personally (Fran) am quite addicted to hugs... they are definetely a great way to release oxytocin (“the love hormone”) and makes me feel that natural high. I even hug myself pretty much everyday to connect with my essence.

Roasted New Potatoes with quick pickled red onion by Deliciously Ella

This dish is our version of Roasted new potatoes with rocket, quick pickled red onion, olives and wholegrain mustard. I was looking for something to make the other day that used baby potatoes as we had half a box left over that needed to be eaten. I came across this recipe on Deliciously Ella’s page. It has the most incredible flavour combinations and is surprisingly filling. I’d never made pickled onion before (let alone quick pickled onion) and am obsessed! Definitely one to try at home. Super easy to make just set aside about 45 mins to an hour for this meal as the potatoes need to cook for 35 mins.

The recipe will feed about two people. You will need:

500g new potatoes
Two handfuls of rocket /arugula
1/2 a red onion, peeled and finely sliced
Juice and zest of one small lemon
3 tablespoons of apple cider vinegar
1 tablespoon of wholegrain mustard
1 tablespoon of coconut sugar
A large pinch of salt
A large pinch of pepper
Olive oil

Optional: sprouts! And any other veggies or nuts to top it off.

Method:

Heat the oven to 220c fan. Half (or third for smaller pieces) the new potatoes and place on a baking tray with a drizzle of olive oil, sprinkle with salt. Roast for 35 minutes until the potatoes turn golden. While they cook place the sliced red onion in a bowl and mix in the apple cider vinegar, coconut sugar, and a pinch of salt. Set aside and let the onion pickle for as long as the potatoes take to cook. Once cooked, take the potatoes out of the oven and place in a large mixing bowl. Drain and add the onions, olives, lemon zest, lemon juice, rocket wholegrain mustard, a drizzle of olive oil and salt and pepper. Mix together and serve. We topped ours with fresh sprouts!
