Eggplant - "Protecting Brain Cell Membranes"
Benefits: Contains Nasunin (in the peel) which helps protect fatty acids in brain cell membranes from free radical damage, helping maintain mental sharpness.
How to use: 100g - 200g. Bake or steam (keep the peel on). Avoid deep-frying as eggplant absorbs oil very quickly.
