Soooooooooo, these photos were 5 years apart. The left one I was two months into my journey from 250 pounds. I was about a month and a half in and already down about 20 pounds. I was not keto I was low carb ( 100 carbs a day) and watching calories. I actually lost 80 pounds total and hurt my knee and gained most of it back. When I started Keto I was creeping back up to my highest. The right photo is on Wednesday. I tried to recreate the photo. Not meaning to toot my own horn but I honestly feel Keto has made me appear younger. I’m grateful for the journey and my 45 years.

Here’s my chicken chipotle recipe:⁣

Ingredients:⁣
1lbs chicken tenderloins⁣
1 tbps mayo⁣
1 tsp onion salt⁣
1 tsp paprika ⁣
1 tsp garlic salt⁣
1 tsp cayenne pepper

Chipotle Sauce:⁣
1 can El Mexicano chiles chipotle ⁣
1/2 cup water ⁣
1/4 cup crema mexicana or heavy cream⁣
1 tbsp chicken bouillon ⁣

KETO CHEESECAKE
CHEESECAKE CRUST:
1/2 cup butter melted
1/4 cup powdered sweetener
2 eggs
3/4 cup coconut flour
1/4 tsp salt

Combine the eggs and butter til smooth, add powdered sugar, salt and coconut flour and mix. After a dough forms knead with your hands a few minutes and turn out on parchment paper. Roll out the size of your pie plate and lay it in, press with your fingers to form the plate.
Par bake for 10 minutes on 350° 🍰CHEESECAKE:
32 oz. or (4) 8 oz. Blocks of Cream Cheese
2/3 Cup Sour Cream
2 Tsp Vanilla
4 Eggs
1 Cup Allulose (or Erythritol)
1/4 Tsp Salt

Make sure cream cheese, sour cream and eggs are all at room temp. They will cream together easier, and give a smoother texture to your cheesecake. For this recipe you will need a 9" springform pan. Preheat oven to 325°. 1. Using a hand mixer or stand mixer, cream your cream cheese until smooth.
2. Add in your sour cream, vanilla and salt. Mix until smooth.
3. Mix in Allulose/sweetener 1/4 cup at a time.
4. On low speed, add 1 egg at a time.
• Don't over mix on any of the above steps, just enough to incorporate all the ingredients.

Pour batter into the 9" springform pan. You don't have to use a water bath while baking, but i feel it gives you a fluffier more even bake. If you chose not to do the waterbath, make sure to put your springform pan on a cookie sheet before putting it in the oven. Either way, bake for 1 hour 15 min.
Let it cool completely before adding the caramel topping.

CARAMEL TOPPING:
1 Cup Allulose
4 Tbsp Butter
1/2 Cup Warm Heavy Cream

1. Add butter and Allulose in a pan on low. Let the butter melt, and the sweetener dissolve completely. Don't stir much during this process, just let it do it's thing.
2. Next turn up heat to medium..let the mixture bubble, and then put in your warm cream. Mix it together, and make sure not to let it burn. After about 5 min, lower the heat back to low, for another few minutes. You should be able to coat the back of the spoon.Take off of the heat. It will firm up more as it cools.
3. Store any unused caramel in the fridge

INGREDIENTS:
1 Cup Shredded Cheddar Cheese
1 Cup Shredded Mozzarella Cheese
½ Cup Grated Parmesan Cheese
1 lb Ground Beef
¼ Cup Minced Onion
1 Tsp Cumin
½ Tsp Chili Powder
½ Tsp Paprika
½ Tsp Onion Powder
½ Tsp Garlic Power
½ Tsp Salt
½ Tsp Pepper
½ Cup Water
INSTRUCTION:
Brown the beef with the minced onion. In a cup mix the cumin, chilli powder, onion and garlic powder and salt and pepper with the water. Then pour over the browned ground beef. Let simmer for 5 - 10 minutes or until all the liquid is evaporated.
In a large mixing bowl, mix the cheddar, mozzarella and parmesan cheeses. Divide the cheese mixture into 6 then make balls. Place onto a parchment paper lined baking sheet. Bake @ 400 F for 6-8 minutes, or until the edges are golden brown.
Let cool for 1- 2 minutes. Flip upside down, then place a few spoonfuls of the beef on the edge of each shell. Tightly roll each one into a cigar shape. (You need to do this quite quickly, before the cheese hardens)
This recipe makes 6 Keto Beef Taquitos.
Note: To reheat, Preheat oven to 350 F. Bake for 6-8 minutes.
