Delicious for a refreshing lunch or side 😛

To make as a meal, you could bulk up on the cheese and pumpkin seeds to add more protein! Chicken would be really good here too! Can add quinoa, rice, pasta too - anything your heart desires!

All of these nutrients are in my pizza and they all make a complete and balanced meal ✨
Food is so much more than fuel - food is social, food is personal, food makes memories, food makes a good time WAY BETTER.
Sure you need the nutrients from fruits and vegetables, lean proteins, and whole grains - but you also need the balance of all of that with enjoyment, taste, flavor, and deliciousness.
Making a good memory is better for you than eating below a certain amount of calories/limiting food groups/considering certain foods as good or bad. Food is food!

Does anyone know how to make an omelette look good?? Asking for a friend of course. Idk this still looks amazing in my opinion so i wanted to share it with you 🍳 had some random items in the fridge last weekend so I put them together for this creation.

Eggs + milk
Lentils
Broccoli florets
Red bell pep
Spinach
Cheddar
Pepper
Hot sauce on top

Yesterday was my last day of my food service management rotation and it was all wrapped up with a specialty plant-based meal prepared by me! (With help), I made spinach stuffed portobello mushrooms with vegetable couscous for 100 people! Next up is my last internship rotation - clinical!

Happy Saturday ✨ I just finished my first wellness dietetic internship rotation and am onto my next one on Monday!

This salad was from last week and was a delish situation to keep me energized for the rest of my work day 🌱

Salad deets:
• Arugula + spinach
• quinoa & blackbean burger
• Cucumber
• chickpeas
• Avocado
• white cheddar cheese
• I used balsamic dressing but dressing choice is up to you!

PS - I’ve been all about adding dried chickpeas on my salads lately, they add in protein & crunch which makes the salad so good!!

Good morning and happy Friday everyone ✨ excited to start my dietetic internship in just a few weeks ~ also feeling a lot of anxiety about it because this is what I’ve been working towards for so long and it’s finally getting so close AHH.

Things helping me with anxiety right now are:
• listening to a book on my early morning commute to work instead of the radio to start the day calmly
• making sure I have plenty of meals and snacks to eat
• talking to friends
• small yoga sessions before bed
• being outside when i can
• taking time to focus on my pre-internship work so i am prepared and ready to start with confidence 😛

If you’ve made it this far, tell me what creamer you’d put in my coffee because it’s definitely missing some 😋☕️
