My favorite part was the veggies!! I love a good Greek style dish 🥰 This mixture included potatoes, cherry tomatoes, cucumber, red onion, bell peppers, Kalamata olives, & feta cheese. Threw some dill & other spices on the salmon. Delicious!!

I find that I stay on track when I plan out meals for the week. I also save money at the grocery store when I go with a plan. Plus eat healthier. WINNING 🏆

You can create your own planner or find one online to print. Either way, having a plan in place is a great action step towards building good habits.

Give it a try and see what works best for your schedule. If you aren’t home every evening to spend time in the kitchen pick out some crockpot recipes to cook while you’re away.

Very simple and delicious cucumber salad 🥒🥗

-1 cucumber
-cherry tomatoes halved
-red onion diced
-olive oil
-juice of a lemon
-feta cheese
-cilantro

Place cucumber, tomatoes, & red onion in a bowl. Drizzle with olive oil. Juice the lemon on top. Toss. Add feta cheese & top with cilantro. Enjoy!! Black olives goes well in this dish.

Do you believe what is used to prepare your meals is important?

There are so many products on the market to choose from. And so much information out there about them, it's hard to know what is the safest to use.

I have been gradually removing plastic and non stick from the kitchen. I'm not 100% there but Ive made a lot of progress recently. We now have stainless steel bowls, pots & pans, a new self sharpening knife set, & bamboo cutting boards to pair with it.

Greek pasta bake 🍝

Need a simple tasty meal for the family? Try this pasta bake out!! Very simple prep so this dish is a great choice for those busy days when you don’t have hours to spend in the kitchen.

- 1-2 lbs chicken (tenderloins or breasts)
- 1/2 yellow onion
- 1/2 green bell pepper
- 2 cloves of garlic
- 1 can of sliced black olives
- 1 handful of spinach
- 1-2 cans of pasta sauce (depends on how saucy you like it)
- 1 box of whole wheat penne pasta
- About 6 oz of feta cheese
- About 6 oz of shredded Italian blend cheese

1)Cook your pasta following package instructions.
2)Dice up your onion, bell pepper, & garlic. Set aside.
3)Cut your chicken into chunks. Season how you prefer. Add some oil to a pan and cook the chicken.
4)Before the chicken is fully cooked, add your onion & bell pepper. Toss your garlic in towards the end.
5)Add the pasta sauce, black olives, and spinach. Season with salt if you desire.
6)Preheat your oven to 375.
7)Toss drained penne pasta & sauce mixture into a large enough baking dish. Mix well. Add feta cheese. Mix well. Top with Italian shredded cheese.
8)Bake for 15-20 mins or until cheese is melted well on top. Enjoy!!

This dish is my go to when I don’t have much time to make a meal for the family. It’s a fan favorite too 😍

Small sourdough loafs ☺️

I was gifted a new loaf pan & had some dough leftover from making pizzas so I made some baby loafs! Not the prettiest but I made some into croutons to pair with homemade chicken noodle soup.

I am excited to add bread making to my homemade creations! Sourdough has an increased number of pre & probiotics from the fermentation process. This is known to improve gut health. Plus homemade products skip any added toxins 😆

Making bread can be added to even the busiest schedules. You just have to plan it out!! Follow me for more creations!!

Very simple protein balls!!

- 2/3 cup peanut butter
- 1 cup oats
- 1/2 cup flax seeds
- 1/3 cup honey

Mix ingredients together. Roll into balls and refrigerate. Boom 💥 An easy snack to grab and take on the go! My kids love them too! You can add other ingredients to this mixture too! I’ve used chocolate chips, coconut flakes, walnuts. Get creative ☺️

Things are sprouting & I’m so excited to nurture my plantings this growing season!! So far I have basil, parsley that’s ready to repot, & to my surprise 2 asparagus have sprouted 😆

Once the rain clears I’ll be prepping the garden for the season! I’m so excited to see what the season brings!

This is a new dish I created. Garbanzo beans, shredded carrots, mushrooms, & chives. I used a little bit of horseradish & a dab of mustard with salt & pepper to taste. It was tasty!

I enjoy creating & making things from scratch. And from my research, I've gathered making bread is not only an art but a science. I'm sure there will be trial and error so wish me luck!!

Meal prep this week included some new Crock-Pot recipes. I have several recipe books I'll break out when I'm looking for new ideas. And crockpot recipes are usually easy and delicious! The picture shown was a cabbage roll casserole. Turned out really good!

Some of my favorite benefits to meal prepping are:
-Shopping with a plan = saving money
-Eat healthier bc you have food prepared
-You don't have to figure out dinner plans daily
-Opens the door to try new things

Meal prepping can be time consuming. Pick out some crockpot recipes. Throw all your ingredients in and let that bad boy cook!

The recipe I used here is:

- 1/2 cup rolled oats
- 1 tblsp chia seeds
- 1/4 cup Greek yogurt
- 1/2 cup almond milk
- 1 tblsp honey
Mix well & refrigerate overnight.

I absolutely love overnight oats! Very simple to prep & good to take on the go. You can add what ever toppings you desire. My fave is peanut butter & bananas!

This meal is a powerhouse! Loaded with essential nutrients, high in antioxidants, gut friendly, heart healthy. One of my favorite things about this meal is it's very filling!! That's a huge win in my book 😆

I LOVE pickled red onion! Red onions are packed full of vitamins and minerals! They are an excellent source of antioxidants and contain flavonoids. Both being highly beneficial for our bodies!

Onions are a staple in our household and something I’m happy to incorporate in our diet!! Try different styles and see what you like best.

Spring rolls 😍

Another experimental dish that turned out great!! This was my first go at spring rolls & it was much easier than I imagined. Plus packed full of rainbow colors 😆

I highly recommend getting in the kitchen and trying new things! It beats buying premade products ANY day!! Plus, it is soooo much healthier knowing what is going into the food you are feeding yourself and your family.

Took a friends advice and checked out an herbal shop yesterday .n


When I walked in the door I felt the comfort of naturalism. What a relaxing, calming feeling I felt!! I purchased some matcha with lions mane mushrooms, an elderberry & reishi syrup, & a brain power loose leaf tea. One satisfied customer!!

This herbal shop was one of the things added to my self care day yesterday and it was the PERFECT addition to ensuring my nervous system remains in balance ☺️
