It’s almost the weekend.
Here’s a reminder to breathe in and out….
Homemade Peppermint Patties ❄️ (vegan, paleo)
These no bake mint patties taste like the real peppermint patty. I know the ingredients seem like 🤔 but TRUST. They’re creamy & minty & the perfect texture!
Ingredients:
8 Tbsp refined coconut oil, melted
1/2 cup raw cashews, or raw macadamias
1 Tbsp non-dairy milk
1/4 tsp peppermint oil
1/8 tsp vanilla extract
3 Tbsp pure maple syrup
1/2 cup dark chocolate chips
1 tsp coconut oil, for chocolate
Measure out 1/2 cup raw cashews (or macadamias), and soak for 5-6 hours or overnight in water. To speed this up, soak in boiling water for an hour. They should be plump & soft or will not work in this recipe!
Then drain water, rinse and add to a high speed blender. Add in melted coconut oil, milk, vanilla, peppermint extract and maple syrup to the blender and blend on high for 1-2 minutes. Scrape and keep blending until completely smooth. (Add an extra Tbsp of syrup if you like sweeter)
Line a baking sheet or plate with parchment/wax paper.
Spoon one teaspoonful of mixture onto paper so it forms a small round circle, the size of a mini peppermint patty. About 1-1/2” round.
Repeat until you make 14 circles. Carefully transfer to the freezer, laying flat. Freeze for 10 minutes to set.
Remove from freezer and repeat the same process, now adding another layer on top of the existing circles, to add thickness.
Place in freezer to set until fully frozen, about an hour.
When ready, keep in freezer while you melt chocolate. In a small bowl, melt choc chips with the 1 1/2 tsp of coconut oil to just warm & fully melted. Too hot will melt the patties when dipped.
Remove from freezer. Lay a circle onto a fork and dip into the chocolate, shake off excess and lay back on the sheet. Repeat with the rest. Try to work quickly so they don’t melt.
Place back in freezer once all dipped to fully set, at least 1 hour. Store in freezer, or fridge for a more melty Junior Mint texture!

Sleep powers the mind, restores the body, and fortifies virtually every system in the body. For adults, getting less than seven hours of sleep a night on a regular basis has been linked with poor health, including weight gain, having a body mass index of 30 or higher, diabetes, high blood pressure, heart disease, stroke, and depression.
𝗗𝗼 𝘆𝗼𝘂 𝗱𝗿𝗶𝗻𝗸 1/2 𝘆𝗼𝘂𝗿 𝗯𝗼𝗱𝘆 𝘄𝗲𝗶𝗴𝗵𝘁 𝗶𝗻 𝗼𝘂𝗻𝗰𝗲𝘀 𝗼𝗳 𝘄𝗮𝘁𝗲𝗿?
Drinking lots of water helps maximize physical performance. If you don’t stay hydrated, your physical performance can suffer. Your brain is strongly influenced by your hydration status. Studies show that even mild dehydration, such as the loss of 1–3% of body’s water content, can impair many aspects of brain function. Drinking plenty of water can also help you lose weight. This is because water can increase satiety and boost your metabolic rate.
𝗗𝗼 𝘆𝗼𝘂 𝘀𝘁𝗿𝗲𝘁𝗰𝗵 𝗳𝗼𝗿 15 𝗺𝗶𝗻𝘂𝘁𝗲𝘀?
Regular stretching helps increase your range of motion in the joints, improves blood circulation and posture and alleviates muscular tension throughout the body. Stretching also boosts nutrition supply to the muscles. When you stretch, you’re improving blood flow in the body and, in turn, circulating more nutrients throughout the body.
𝗗𝗼 𝘆𝗼𝘂 𝗰𝗵𝗲𝘄 𝘆𝗼𝘂𝗿 𝗳𝗼𝗼𝗱 𝘂𝗻𝘁𝗶𝗹 𝗶𝘁 𝗯𝗲𝗰𝗼𝗺𝗲𝘀 𝗹𝗶𝗾𝘂𝗶𝗱?
There are digestive enzymes in your saliva, and when you don’t chew your food until liquid, you’re skipping an important part of your digestive process. There’s the whole mindfulness component as well - chewing your food at least 30 time

☀️ drink 1/2 your weight in ounces of water per day
☀️ sleep 7-8 hours per night
☀️ chew food until it becomes liquid (digestion starts in your mouth!)
☀️ stretch, walk &/or move your body for at least 15 minutes per day.
