Meal prep doesn't have to be completed or time consuming.

Step 1: choose your protein, carbs and veggies
Step 2: cook/bake/grill everything
Step 3: portion and box

Sample menu : baked cod and shrimp with rice,veggies and lentils

Method: put cod with shrimp in the oven with a little seasoning of your choice and a little olive oil. In another pan so the same with your choice of veggies. Cook rice and lentils. (I mixed lentils with a little green onions, parsley, mayo and sour cream). When done, portion everything. Done in 30 min.
