Meal Prep Monday Recipe!

Breakfast is typically the hardest to get in as we’re rushing to get out the door for work or my case feeding a newborn, but what ever the case may be I’ve gotten in the habit of prepping at least something to grab and heat heat up quick in the go. I have a lot of versions of egg baked and quiche but I experimented with a new crust and it’s delicious!

Oatmeal Crust:
100g Oats
3 tablespoon olive oil ideally extra virgin
2-3 tablespoon cold water
Pinch salt

Place the oats in a food processor until finely ground. Add the olive oil and salt and blend until well mixed.
Add the water a little at a time, pulsing between each addition. The mixture will start to clump together.
Then take a iron skillet and press out crust with fingers until even in the pan. I used a medium size skillet. Bake empty for 10 minutes, then add your filling and bake as per your recipe. I filled with a mixture of eggs, egg whites, bacon and spinach. Check out one of my recipes below 👇🏼

Meal Prep Monday!

Let’s talk potato’s. Slice them, dice them, smash them, make them any way you like and freeze them! I like to prep a whole bag of potato’s at once. I’ll cook them for 20-30 mins, let them cook and freeze them. They are perfect for dinners, all you have to do is pull them out and throw them in the air fryer. What’s better is you know every ingredient you put in them!

Soup season! As the weather is cooling down what is more appropriate than pulling out your crockpot and throwing in random ingredients.

White Bean Chicken Chili
5-6 Chicken Breast
2 Tsp Avocado Oil
1 Tsp Minced Garlic
1 4oz Can Green Chile
2 Cans Great Northern Beans
1 Can Corn
5oz plain Greek Yogurt
2 Cup Chicken Bone Broth
1/2-1 cup water
Salt, Pepper, Red Chili Flakes, Cumin, Oregano and everything but the elote seasoning.

Throw chicken, broth and seasonings in a crockpot and cook on low until chicken is pull apart ready. Then throw the ready of the ingredients and cook on low for an additional hour. I topped my chili with a chicken flaunta.

Meal Prep Monday Tip!

With food pricing skyrocketing, finding affordable, healthy, protein option can be a challenge. This turkey breast from Costco has been a staple for a while in my weekly rotation and it’s a super affordable clean protein source. I like to chopped it up and sauté with a little avocado oil, salt and pepper. When preparing your lunch, just add your favorite sauce or pair with guacamole!

Haven’t been inspired to work on recipes in a long time. Glad the juices are flowing back and I’m working in the kitchen...

Pistachio Coconut Cold Cream

1 Can Coconut Cream
2 servings Pistachio Syrup

This recipe is simple. Separate out the coconut cream from the coconut water. Place coconut cream into a mason jar. Add in syrup. Whisk until it becomes fluffy! I whisk for a good 2 mins at least as it begins to fluff up and expand. The coconut cream from Trader Joe’s is the best 🥥 serve on top your coffee ☕️
