Meal Prep Monday Recipe!
Breakfast is typically the hardest to get in as we’re rushing to get out the door for work or my case feeding a newborn, but what ever the case may be I’ve gotten in the habit of prepping at least something to grab and heat heat up quick in the go. I have a lot of versions of egg baked and quiche but I experimented with a new crust and it’s delicious!
Oatmeal Crust:
100g Oats
3 tablespoon olive oil ideally extra virgin
2-3 tablespoon cold water
Pinch salt
Place the oats in a food processor until finely ground. Add the olive oil and salt and blend until well mixed.
Add the water a little at a time, pulsing between each addition. The mixture will start to clump together.
Then take a iron skillet and press out crust with fingers until even in the pan. I used a medium size skillet. Bake empty for 10 minutes, then add your filling and bake as per your recipe. I filled with a mixture of eggs, egg whites, bacon and spinach. Check out one of my recipes below 👇🏼
