Today was my first colonoscopy. Not fun but not terrible either. After I woke up from sedation I was hungry from not eating for a day and a half. They offered me food. Toast or a muffin. I politely declined and said I am low carb. They then offered me applesauce. I also declined and just asked for a tea. The only choices they had at the hospital are high carb sugar filled options. Note to self. Bring your own food next time. Thankfully all was normal and I don’t have to do that again for 10 years.

I haven’t posted in quite awhile. A lot has happened since then. This summer I got back on the horse and started eating healthy again. Low-carb/keto works for me and I am slowly getting healthier by not eating as much sugar and simple carbs. I feel great and bonus am losing weight. Here is one of my favorite meals right now.

Made a tasty dish for supper tonight Creamy Salsa Chicken. I served it with sautéed summer squash. It was so good and I have lots leftover for the week.

Instant Pot Salsa Chicken is rich, creamy, and addictive! It is hard to believe such a simple recipe can pack so much flavor.

The Incredible Edible Egg! 🍳 Eggs have been a staple of healthy nutrition forever. But where the “health” is may surprise, it’s in the YOLK, and it’s best if you keep them runny..

Most think Eggs are healthy because of their easily digestible protein, the “whites”. But I eat eggs because of the supercharged yolks. 💪🏽 The yolks are jammed packed with iron, calcium, zinc, B-Vitamins, and 100% of the precious forms of vitamin A – lutein and zeaxanthin. And if this wasn’t enough, the yolk packs all the healthy cholesterol, YES – I said cholesterol is HEALTHY, and fats.

But when you overcook the yolks, when they become hard – like hardboiled eggs. You lose many of these nutrients and cause the cholesterol and healthy fats to be oxidized. Oxidized cholesterol and fats are what really causes cardiovascular disease and damage to your blood vessels.

If you want to get the most out of your eggs, stop ordering egg whites and lightly cook your eggs and keep the yolks runny and soft! 🏃🏽‍♂️

Good info regarding the fats you should be eating. Yes Butter is good for you. Margarine and Vegetable and seed oils are terrible for you. I also stay away from other oils that oxidate including olive oil and coconut oil. They are on the 10 bad foods list.
