I know many of us are familiar with the story, but I just love this illustration… the little girl at the back hugging her mumma❤️.

In 1922, at the University of Toronto, scientists went to a hospital ward with children who were comatose and dying from diabetic keto-acidosis. Imagine a room full of parents sitting at the bedside waiting for the inevitable death of their child. The scientists went from bed to bed and injected the children with the new purified extract - insulin. As they began to inject the last comatose child, the first child injected began to awaken. One by one, all of the children awoke from their diabetic comas. A room of death and gloom, became a place of joy and hope.

Double serve of salmon for hubby. He said it was the best salmon he’d ever had. (He was very hungry…but I’ll take it!) 😂

KETO CREME CARAMEL!!For the custard:- 4 whole eggs (room temp)+ 2 yolks- 60g sweetener of choice- 600mls full-cream milk...

KETO CREME CARAMEL!!

For the custard:
- 4 whole eggs (room temp)+ 2 yolks
- 60g sweetener of choice
- 600mls full-cream milk (you can use 1/2 almond milk, 1/2 cream to make it even more low carb.. but real milk is best).
- tsp vanilla extract

For the caramel:
100g Allulose sweetener + 3tbsp water. *must be Allulose. It won’t work with any other kind.
**if you like extra syrup, do 150g with 4tbsp water.

Usual method…
1) make the caramel first (you want a deep golden colour), put in individual ramekins or pie dish. Swirl around till set. (This makes 6 of my Le crueset sized ramekins)
2) Make custard - beat eggs, with sugar and then whisk in milk. Try to pop bubbles.
3) extra step isn’t essential, but helps to get a smooth finish.. strain your custard through a sieve!
4) pour custard into ramekins / pie dish.
5) bake in a water bath (Bain Marie) at 150C for around 30mins.
Then refrigerate for a few hours until set.
Delicious and so easy!

Whilst I love the convenience and predictability of some low carb breads / wraps on the market.. i am very conscious of the preservatives and “crap” that also comes along with them… ugh.

I’ve recently been experimenting with dark rye sourdough - it tastes great, less scary ingredients.. and with a pre-bolus, we can manage it with her numbers. 30g of carb per 100. Did I mention it was delicious? ;)

Low-carbified (yes, I made up that word) “HAWAWSHI”. Aka, the Egyptian OG of stuffed pita pockets.
Whilst, low carb tortillas will never be a match for Egyptian ‘baladi’ bread (my gypo friends will attest to this), this is still bloody delicious - and much friendlier on the BGs!

INGREDIENTS
500 g 80% beef or lamb mince (lamb is more traditional)
1 onion, quartered
2 garlic cloves
1 small tomato, quartered (or 1/2 of a large one)
1 small red capsicum, roughly chopped
½ cup parsley, roughly chopped
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground cardamom
1 tsp sumac
1 tsp paprika
½ tsp chilli powder (optional)
Salt and black pepper

METHOD
In a small food processor, blitz the onion and garlic, then add the tomato, capsicum, parsley and spices to the food processor and blitz until all combined.

In a large bowl with the mince in it, add the blended mix and incorporate well into the meat with your hands.

Then just put some of the spiced mince on 1/2 of one side of the low carb tortilla. Flatten it out with your hand. It shouldn’t be too thick. Fold over the other side and press down.

Heat up some oil in a fry pan and fry the tortilla in the pan for a few mins, turn over and fry on the other side. Doesn’t take long to cook!

Cut in half and enjoy with some tahini and salad.
Easy and delicious 😋
