What’s for lunch? A simple and healthy salad to end the first work week of 2022! I chose Romaine lettuce as the base because I love the crisp texture. I added in any fresh vegetables I had in the fridge. Topped with sliced turkey and a homemade mustard vinaigrette dressing. I always make extra to keep on hand. Enjoy!

Mustard Vinaigrette c/o

1 tablespoon Dijon Mustard
1 1/2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
Salt
Pepper
1/2 cup EVOO
1 small garlic clove

STEP 1
In a small bowl or measuring cup, combine the mustard, vinegar, lemon juice, salt & pepper. Whisk in the oil.

STEP 2
Peel the garlic clove and lightly crush, keeping the clove intact. Place in the dressing and allow to marinate for at least 30 minutes. Remove from the dressing before serving.

Are you a prisoner of the past or a pioneer of the future? The choice is yours. We can always control how we think, respond and act.
A few supportive tips:

•Think about responding rather than reacting.

•Take a breath (or count to 10 slowly). Buy yourself a bit of time before you react.

•Get to know your triggers and find an outlet to help you collect your thoughts before reacting.

•Replenish your energy-(yoga, meditation, strength training, running, journaling).

•Re-phrase your script!

Keep in mind that this takes time!

Monday Motivation!
When my daughter was younger she used to set up her dolls for push-up contests and join in on the fun. She would announce herself as the winner when she got to 5. Can you set a goal for yourself to strive for 10 push-ups on day 10?

Amidst the chaos and stress of daily living, self-care is unfortunately sacrificed so that we can invest in the pressures around us. At we explore questions that you must confront to achieve true balance. Mindful living means intentionally making choices that will lead to your best life.
A few suggestions-
•Laugh more
•Take a beat-when feeling stressed or overwhelmed, force yourself to stop and take a few deep breaths and drink water.
•Replace “should” with “could.” When negative self-talk arises, flip the “should” to “could” and choose to empower yourself rather than put yourself down.
•Say a daily affirmation-write down an empowering statement and put it where you’ll see it. Say it out loud each and everyday.

INGREDIENTS
1 1/2 cups graham cracker crumbs
1/4 cup yogurt
1/4 cup brown sugar swerve
1 tsp cinnamon
1/2 tsp each - nutmeg, cloves, ginger, salt
1 cup pumpkin purée
3/4 cup cashew milk
3 tbsp egg whites (or 1 flax egg)
2 tbsp all purpose flour

DIRECTIONS
Preheat oven to 400°. Line a muffin tin with silicone liners. In a large bowl mix the graham cracker crumbs and yogurt until crumbly but can still stick together. Disperse the crust mixture into the cups. Mix the remaining ingredients together until smooth and there are no clumps. Disperse the batter into the muffin tin. Bake for 20-30 minutes or until a toothpick inserted comes out clean. Allow to cool slightly, top with coconut/light whipped cream and some extra cinnamon. Enjoy!

Makes 14 mini pumpkin pies (you can also make this in a pie dish if preferred) 🎃

TOFU BIBIMBAP

Ingredients:
-Extra firm tofu
-Chickpeas
-Onion
-Any veggies you want - Brussels, mushrooms, cauliflower, etc…
-Lots of spices, anything you want - I do salt, pepper, garlic powder, onion powder, Chile powder, paprika, cumin - use a heavy hand.
-Arugula
-Egg
-Rice - brown, white or cauliflower

Press tofu - wrap in a towel and put a pan on it to get the water out. Rinse and dry chickpeas
Add tofu, chickpeas and cut up veggies on a sheet pan. Coat in olive oil and add the spices. Roast on 425 for as long as you want. Scoop the mixture over rice, add arugula and a fried egg on top.
Add some Gochujang and you’re ready to eat!
