Zucchini Spaghetti with Bechamel - A smart recipe to give more vegetables to kids 🍝

Ingredients
- 1 zucchini
- vegan chicken* or real chicken
- 1 spoon of flour (whole-wheat is better)
- 1 spoon of margarine
- 2 glasses of milk of plant-based drink
- walnuts
- salt, white pepper, olive oil

*Product that imitate chicken meat, made with plant-based proteins like soya beens or other legumes.

Preparation
1. Stir-fry the pieces of chicken in a pan with olive oil.
2. Cut the zucchini in forms of Spaghetti. You can use a potato peeler for it.
3. Prepare the Bechamel sauce.
First melt the margarine in a pan. Add the flour, mix and remove. Add the milk or plant-based drink little by little and cook until a solid sauce. At the end, add white pepper and crashed walnuts.
4. Pass the sauce into the chicken pan, add the zucchini Spaghetti, turn off the flame and leave 5 min the ingredients together to take a good flavour.

🍝 We cooked the vegan version and it's incredibly tasty 😋

➡️ Espaguetis de Calabacin con Bechamel

Ingredients
- 1 calabacin
- pollo vegano* o pollo normal
- 1 cuchara de margarina
- 1 cuchara de harina (integral mejor)
- 2 vazos de leche o bebida vegetal
- nueces
- sal, pimienta blanca, aceite de oliva.

*Producto que imita la carne de pollo preparada con proteína vegetal, normalmente con soja u otros legumbres.
👌La Heura es una buena opción.

Preparación
1. Saltear los trozos de pollo en una sartén con aceite de oliva.
2. Hacer los espaguetis de calabacin con un pelador de patatas.
3. Preparar la salsa de Bechamel.
Primero calentar la margarina en una sartén. Luego añadir la harina, mezclar y remover. Echar la leche poco a poco y cocinar hasta que la salsa esté sólida. Al final, añadir unos nueces machacados y la pimienta blanca.
4. Pasar la salsa de Becham en la sartén de pollo, añadir el calabacin, apagar el fuego y dejar reposar unos 5 min.

🍝 Nosotros cocinamos la versión vegana y está súper sabrosa 😋

Perberesit
- 1 kungulleshke
- mish p**e
- 1 luge margarine
- 1 luge miell (me mire integral)
- 2 gota qumesht normal ose bimor
- arra te shkermoqura, kripe, piper i bardhe, vaj ullirin.

Pergatitja
1. Skuqim ne nje tigan me vaj ulliri copat e mish*t te p**es.
2. Presim kungulleshken ne forme spageti me ane te nje qeruesi patatesh.
3. Pergatisim salcen bechamel.
Fillimisht shkrijme margerinen ne nje tigan. Shtojme mjellin dhe e trazojme. Pastaj hidhe qumeshtin pak nga pak dhe gatuaj derisa salca te jete kremoze. Ne fund hidhi arrat dhe piper te bardhe.
4. Kalo salcen bechamel te tigani me mishin e p**es, shto spagetit e kungulleshkave. Fik zjarrin dhe lere te pushoje per rreth 5 min.

Today we are very very happy 😃
The sun came back in Tromso, after 2 months of darkness.

In Tromso, people celebrate it by walking out to take the first sunlight of the year.

They also have a special sweet for this day "Solbolle" or "Sun Ball" that you can see it in the picture.

👉We always recommend to limit sugar intake but we don´t mean to quit your social life and traditions that connect you with your friends and family.

👉If you follow a healthy lifestyle in a regular way, eating less healthy foods occasionally does not make you unhealthy.

💗For you living in Tromso, enjoy this day and enjoy the sweet Solbolle.

We and my sisters always send them pictures of our healthy habits and they have started to do the same, on their 60th.

Motivate your family and your friends with healthy habits.

Invite them for a walk, hiking, swimming, running, skiing.

Make them move. Make them healthier.

Here are some examples of cheap and healthy sources of protein. Of course, is best to eat fish fresh, but canned fish is also a healthy option and sometimes cheaper.

Our main source of protein are legume, eggs, soya products.

There are many benefits of seasonal fruits and vegetables. Seasonal fruits and vegetables provides greater amount of vitamins, minerals and proteins.

🌴Are also good for the environment as less energy is needed to storage them and reduce CO2 emissions.

💚 Eating seasonal fruits often implies eating locally and support for the local farmers.

🍃 Nature is so wise and it seems that she knows what we need in each season. In autumn for example, nature offers us fruits rich with vitamin C, exactly what we need when flues start (well this year doesn't count🙄).

In summer that we need to hydrate more, nature offers fruits and vegetables that contain high amount of water such as cucumber, tomatoes, melon, watermelon...

As this week we are talking about the fruits, in the photo we present some seasonal fruits of the Mediterranean climate.

At the end of October in Catalonia is time to celebrate La Castanyada and to eat Panellets.

Panellets are catalonian traditional sweets made with almonds, pine nuts and a considerable amount of sugar.

Last October, when we were living in 🧡💚Catalonia 💙💜 we made this healthier alternative. Panellets are accompanied with chestnut and its nice to eat them close to a fire🌰 🔥🌰

➡️ Prepare them one day before as is best that the dough stays one night in the fridge before making the balls.

➡️ Prepara la masa un día antes ya que lo mejor es que la masa se quede en la nevera durante una noche.

This Friday, 23.10.2020, EU voted Yes to Amendment 171 that does not allow to compare the plant-based products with dairy.

In our opinion, in times of climate crisis, this a backward step that EU is doing with this restriction that could result in bans on sustainable plant-based food packing, promotion and innovation.

Labeling and visual clues are how the consumers determine what a product is and what it can be used for. Using words like "milk", "cheese" "yogur" for plant-based products facilitate this message to the consumers and help their promotions.

🔅 Support plant-based sustainable products and make them part of your daily diet, for the planet, for the animals and for your health.

🔅 Look at the nutrition label and choose:

▶️ Products with high content of the primer ingredients (high in soy, almonds, nuts, h**p, peanut... )

▶️ Products fortified with Ca, vit D, and other micronutrients.

▶️ Products with less salt and added sugars.

▶️ Products with less food additives and local if possible.
