Simple + Delicious Spiced Shrimp Taco Bowl

This lineup and this weekend just reminded me of summer. Not to be a jerk, but we had some amazing weather (sunny and mid 70s) and I spent as much time as possible outside. Wrapped up the weekend with this sitting in the backyard & it just hit the spot.
The shrimp is spiced with a mix of fennel, smoked paprika, & red chili flakes and just a little salt. So simple yet so good. I served it along with a big base of butter lettuce, half an avocado, some shredded cheese, and a homemade pico with red & yellow tomatoes, cilantro, red onion, and lime juice. Enjoyed it all with some MichelobULTRA.
Here is how I made everything:
1.First, I mixed the shrimp with the spices. I took 1lb wild shrimp and drizzled 1 tablespoon olive oil on it and spiced with some crushed fennel seeds (about 1/2 to 1 tablespoon), some high quality smoked paprika (1 tbsp tablespoon), garlic powder, a little salt, and added 3 crushed garlic cloves. Massage the spices well and let this sit for 15-30 mins. You can just get started right away if you’d like.
2.When you’re ready to make the shrimp, get a pan on medium heat, add 1 tablespoon of oil/butter of your choice, and cook on each side for about one minute. Dont over do shrimp as it gets rubbery.
3.Once you’ve got your shrimp done, I started with a big base of greens and added the rest of my ingredients. I added 1/2 avocado, cheese, and the pico. Season the pico however you like to taste, I like a little extra lime juice, fresh jalapeño, and salt and pepper. Pico is just finely chopped onion, tomatos, fresh jalapeño, and fresh cilantro & lime.

Buffalo Chopped Chicken Salad 🔥✨
INGREDIENTS:
3 chicken breasts (small & cut into nuggets)
1 cup rice crumbs
2 eggs, whisked
1/2 cup buffalo sauce
1 tsp garlic powder
1/2 tsp sea salt & pepper
2 1/2 cup green leaf lettuce
1/2 cup cucumber, chopped
1/2 cup tomatoes, chopped
1/2 avocado
optional: cilantro, red pepper flakes

INSTRUCTIONS:
Chop up chicken breasts into nugget pieces. Make sure to pat dry with paper towel.
Make two bowls: one with two eggs whisked and another with rice crumbs, garlic powder, sea salt & pepper.
Take one nugget and roll in egg mixture and then coat compltely with rice crumbs. Set aside and make sure to do with all pieces.
Place in the air fryer at 350 degrees for 12-14 minutes. Flip nuggets around half way through.
Once done, pour nuggets into a bowl and mix with buffalo sauce to completly coat. Place back in the air fryer at 370 for 2 minutes.
Prepare salad by chopping up greens, cucumber and tomatoes.
Prepare bowl by adding greens, cucumber and tomatoes and chopping up together. Add avocado, buffalo chicken and cilantro on top...Enjoy 🙌

Here’s the recipe: ⤵️
Ingredients:
- Chicken thighs (boneless/skinless)
- Any veggies you have on hand. I used onions, zucchini, and broccoli
- Orange Ginger Marinade (sugar free)
- Minced garlic
- Avocado or Olive Oil
- Salt and pepper to taste

For the Stir-Fry:
* Cut the chicken into 1 inch pieces than dump it with marinade (about 1/3 cup) in a large plastic bag and let sit for 30 minutes mixing it around every now and then.

* Heat oil in a large skillet. Make sure its nice and HOT. Using a pair of tongs remove.

This is a Mongolian beef at heart, with our magic woven in 😁🤣

2 pkgs of sirloin tender steaks
Some olive oil for frying
1/4 cup coconut flour
1/2 ea green, red, orange and yellow bell peppers
1 1/2 cups fresh sliced mushrooms
1 bag of steamable brocolli florets
Pink Salt and Peppercorn, and Garlic Lovers

The sauce
1/2 cup cocinut aminos
1/2 cup brown swerve
1 tsp ground ginger
1 tbsp minced garlic
1/4 cup water

Heat up that cast iron and rough chop the peppers, slice the shrooms.

1) Season the steaks with some Pink Salt and Peppercorn. Slice across the grain thinly.
2) Dump meat into a gal ziplock and cover with the coconut flour , close and shake to coat all.
3) Add a little oil to your skillet and fry the steak strips. Lay em flat and don't over crowd. Flip in a few minutes , you should have nice color on em. A few minutes on the other side and done. Put onto a paper plate and repeat til all are done.
4) Add all the sauce ingredients in a small bowl and whisk to combine. Put mixture into a small saucepan and bring to a simmer. Turn heat to low. Start to steam the brocolli for 7 minutes in the micro.
5) When the meat is done , Liberally sprinkle Garlic Lovers on the veggies and fry just til tender. Add the beef back in and mix. Add the sauce in and let simmer for 10 minutes. Sprinkle with a little red pepper flake to taste and mix. Dump the brocoli on top and let rest off the heat for 10 minutes. Have a great week Brawnies !!!! ❤❤❤

Used Rotisserie Chicken from and threw it in some Seasoned diced Tomato sauce (Chili Starter) and topped it off with Half an Avocado and Some Sour Cream!

Baked chicken breast seasoned with

Grape tomatoes

Feta cheese

I used 3 chicken breast and seasoned with a local Houston Greek restaurant seasoning topped with avocado oil. Bake 375 for 42-45 mins. For dressing, I used the same seasoning and added lemon juice & extra virgin olive.
