Chocolate cheesecake
For the base:
200 g chocolate biscuits
75 g of melted butter
For the filling:
680 g cream cheese
200 g white sugar
3 eggs /at room temperature/
380 g natural chocolate
200 g sour cream
1 teaspoon vanilla
For topping:
200 g liquid cream – cooking
200 g natural chocolate
First, crush cookies and mix with melted butter. Cover the bottom of the pan with the mixture and bake for 10 min at 180 degrees. In a water bath in a bowl, place the chocolate by breaking it into pieces to melt it. Stir and, once melted, set aside. In the bowl put the cream cheese. Using a mixer, beat the cream cheese, and put 200 g of sugar. Stir well. Pour in the melted chocolate slowly and beat low. Once homogenized, add eggs one at a time. Stir well after each one. Add the vanilla. Add the sour cream and mix. The mixture is ready, remove the pan from the refrigerator and pour the mixture inside. Turn on the oven at 180 C, place a medium-sized saucepan in the oven and bake for 50-55 minutes. The cheesecake is ready when its centre is still slightly liquid when shaken. Remove and let cool at room temperature for about 1 hour. Then place and refrigerate for at least 4-6 hours, but best for 1 night.
To make the frosting, heat the cream on the stove and put on the broken chocolate pieces. Wait for it to melt well and remove from heat, after that pour cheesecake. You can decorate whatever you want.
