Jalapeno Popper Chicken

Ingredients
4 chicken breasts
1 tablespoon avocado or olive oil
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon onion powder
4 ounces cream cheese, softened
¼ cup grated cheddar
¼ cup minced jalapeno
2 tablespoons mayonnaise
1 teaspoon garlic, minced
1/4 teaspoon salt
4 slices bacon

Instructions
1. Preheat oven to 375 degrees.

2. Drizzle olive oil over the chicken breasts and sprinkle with paprika, garlic powder, and onion powder on each side. Rub the spices into the chicken to coat.

3. Use a sharp knife to cut a deep pocket into the side of each chicken breast. Set aside.

4. Add the cream cheese, cheddar, jalapeno, mayonnaise, garlic, and salt to a small bowl and stir well to combine.

5. Spoon the mixture into the chicken breasts.

6. Cut each slice of bacon in half and lay 2 pieces over each chicken breast.

7. Bake for 25-30 minutes or until the chicken is cooked through.

8. If you’d like to crisp the bacon even more, place the dish under a broiler set to high for 1-2 minutes.

Keto Egg Roll in a Bowl

Ingredients
1 pound ground chicken
2 teaspoons oil
16 ounces coleslaw mix
4 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce
3 large eggs
1/4 cup chopped green onions
1 tablespoon sesame oil
sriracha, for serving

Instructions
1. Heat a large skillet or wok over medium heat.

2. Heat 1 teaspoon of oil in the skillet and then add the chicken, crumbling the meat as it cooks.

3. When the chicken is cooked through, add the coleslaw, garlic, ginger, and soy sauce to the skillet.

4. Cook, stirring often, for 5 minutes to soften the cabbage.

5. Press the cabbage mixture over to the side of the skillet and add the remaining teaspoon of oil to the empty portion of the skillet. Crack in the eggs. Scramble the eggs until cooked through. Stir the eggs into the cabbage mixture.

6. Stir in the green onions and drizzle with the sesame oil.

7. Serve with a drizzle of sriracha, if desired.

Baked Chicken Drumsticks

Ingredients
2 pounds chicken drumsticks
2 tablespoons avocado oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chopped parsley
½ teaspoon salt
½ teaspoon cracked pepper

Instructions
1. Preheat oven to 425 degrees. Spray a baking sheet with non-stick spray.

2. Add all of the ingredients to a large zip top bag and seal. Smush the chicken around in the bag to coat in the seasoning.

3. Arrange chicken on the baking sheet and bake for 40-45 minutes or until a thermometer reads 165 degrees.

4. Serve immediately.

Cauliflower Risotto

Ingredients
3 tablespoons butter
1 shallot, minced
1 clove garlic, minced
16 ounces riced cauliflower, about 1 head
½ cup heavy cream
1 cup shredded Parmesan
½ teaspoon salt
½ teaspoon cracked pepper
2 tablespoons chopped parsley

Instructions
1. Melt the butter over medium heat. Add the shallot and cook for 3 minutes, stirring often.

2. Stir in the garlic and cook for 30 seconds more.

3. Add the cauliflower and cook over medium heat for 10 minutes, stirring often.

4. Add the cream, Parmesan, salt, and pepper and stir well. Cook over medium heat, stirring occasionally, until cauliflower is tender and mixture is thick and creamy, about 5 minutes.

5. Stir in the parsley before serving.

Chicken Stir Fry

Ingredients
1 pound boneless skinless chicken breasts
2 tablespoons vegetable oil, divided
1 cup broccoli florets
1 cup cauliflower florets
2 cups chopped bell peppers
1/4 cup soy sauce
1/4 cup vinegar
1/4 cup honey substitute
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon chili paste

Instructions
1. Heat a large skillet or wok over medium high heat. Add one tablespoon of vegetable oil to the skillet to heat.

2. Dice the chicken and add to the skillet. Cook, stirring often, about 6 minutes or until cooked through. Remove to a plate and set aside.

3. Add another tablespoon of oil to the skillet. Stir in the peppers, broccoli, and cauliflower and let cook for 5 minutes or until tender-crisp, stirring often.

4. Stir together soy sauce, vinegar, honey, garlic, ginger, and chili paste in a small bowl. Add to pan and stir to coat. Cook 3 minutes, stirring often.

5. Return chicken to the pan and cook for 2 minutes while stirring.

6. Serve immediately.

Avocado Egg Salad

Ingredients
6 boiled eggs
2 ripe avocado, diced
1/2 lemon
1/4 cup minced red onion
2 teaspoons fresh dill
½ teaspoon salt
½ teaspoon pepper

Instructions
1. Peel and dice the boiled eggs and place in a medium mixing bowl.

2. Add the avocado to the eggs and stir well. The avocado will become creamier the more you stir and coat the eggs.

3. Squeeze the lemon half over the eggs and stir in the onion, dill, salt, and pepper. Stir well to combine the mixture.

4. Serve immediately.

Mini Cheesecakes (with strawberry sauce!)

Ingredients
For the cheesecake:
16 ounces cream cheese, room temperature *see note
½ cup sweetener, such as Lakanto Monkfruit
2 large eggs, room temperature
2 teaspoons vanilla extract
For the strawberry sauce:
8 ounces strawberries
3 tablespoons sweetener, such as Lakanto Monkfruit
2 teaspoons fresh lemon juice

Instructions
1. To make the cheesecake:

2. Preheat oven to 325 degrees. Line a muffin tin with paper liners.

3. Beat together the cream cheese and eggs until smooth and creamy.

4. Add the sweetener and vanilla to the cream cheese mixture and mix until well combined. Do not overmix.

5. Pour the batter evenly between the 12 muffin wells. Use a large cookie scoop to get evenly sized portions every time.

6. Bake for 25 minutes or until just slightly jiggly in the center.

7. Cool completely on the counter before transferring to the refrigerator to finish cooling.

8. When cheesecake is completely cooled, spoon strawberry sauce over the tops and serve.

To make the strawberry sauce:
1. Wash and quarter the strawberries.

2. Place the strawberries in a small sauce pan with the sweetener and lemon juice.

3. Cook over low heat for 20 minutes, stirring occasionally, until the strawberries are fully softened. Break the strawberries up with a spoon as you stir.

4. For a smooth sauce, use an immersion blender to puree the sauce. For a chunky sauce, use a spoon or fork to mash the strawberries to your desired consistency.

5. Transfer the sauce to a bowl and cover. Refrigerate until ready to use.

6. Store in the fridge for up to 1 week.

Cheddar Bacon Cauliflower ‘Potato’ Salad

Ingredients
1 large head cauliflower
½ cup grated cheddar
⅓ cup mayonnaise
1/4 cup chopped red onion
6 slices fried bacon, diced
2 hard boiled eggs, peeled and diced
1 tablespoon dill
1 teaspoon mustard
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions
1. Chop the cauliflower into bite-sized pieces and place in a steamer basket.

2. Steam for 3-5 minutes or until tender-crisp.

3. Add the cauliflower to a large mixing bowl and place in the fridge to chill for 2 hours.

4. Add the remaining ingredients to the bowl of cauliflower and stir well to combine.

5. Serve immediately.

Mexican Meatballs (with Queso!)

Ingredients
For the meatballs:
1 pound lean ground beef
¾ cup crushed pork rinds
1 large egg
¼ cup minced onion
¼ cup minced cilantro
2 cloves garlic, minced
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon garlic powder
For the dip:
½ cup heavy cream
1 ounce cream cheese
1 tablespoon butter
1 ½ cups shredded cheddar
¼ cup canned diced tomatoes and chiles
cilantro and paprika, for garnish

Instructions
1. Preheat oven to 350 degrees. Spray a rimmed baking sheet with non-stick spray.

2. Add all of the ingredients for the meatballs into a large mixing bowl and mix until well combined.

3. Use a medium cookie scoop to scoop out balls of meat and roll between your hands to form the meatballs.

4. Place the meatballs on the prepared baking sheet and bake for 25 minutes or until cooked through.

5. When the meatballs are nearly cooked through, make the queso by adding the heavy cream, cream cheese, and butter a small sauce pan over medium heat. Stir constantly until the butter and cream cheese have melted.

6. Remove from the heat and stir in the cheddar cheese until the sauce is smooth and creamy.

7. Stir in the tomatoes and chiles to combine.

8. Add the cheese sauce to a serving dish and sprinkle with paprika and cilantro. Arrange meatballs around the cheese sauce and serve with toothpicks for dipping.

Ingredients
4 slices bacon, diced
1 ½ pounds radishes, diced
1 teaspoon minced garlic
1//2 teaspoon salt
½ teaspoon pepper
2 teaspoons chopped parsley

Instructions
1. Heat a large skillet over medium heat and add the bacon to the pan.

2. Cook, stirring often, until nearly crisp.

3. Add the radishes to the pan with the bacon and continue cooking, stirring often, until radishes are softened, about 15 minutes.

4. Add the garlic and cook for 1 more minute.

5. Sprinkle with salt, pepper, and parsley before serving.

6. Serve hot.

8 slices bacon, fried and crumbled
½ cup mayo
¼ cup sour cream
2 tablespoons ranch seasoning mix
1 teaspoon white distilled vinegar

Instructions
1. Add the broccoli, cheddar, onion, almonds, and bacon to a large mixing bowl and stir to combine.

2. Add the mayo, sour cream, ranch seasoning, and vinegar to a small mixing bowl and stir well.

3. Pour the dressing over the broccoli salad and stir well to coat.

Spinach Stuffed Chicken Breasts

Ingredients
4 chicken breasts
1 tablespoon olive oil or avocado oil
1 tesapoon paprika
1 teaspoon salt, divided
¼ teaspoon garlic powder
¼ teaspoon onion powder
4 ounces cream cheese, softened
¼ cup grated Parmesan
2 tablespoons mayonnaise
1 ½ cups chopped fresh spinach
1 teaspoon garlic, minced
½ teaspoon red pepper flakes

Instructions:
1. Preheat oven to 375 degrees.

2. Place the chicken breasts on a cutting board and drizzle with oil.

3. Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.

4. Use a sharp knife to cut a pocket into the side of each chicken breast. Set chicken aside.

5. Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining ½ teaspoon of salt to a small mixing bowl and stir well to combine.

6. Spoon the spinach mixture into each chicken breast evenly.

7. Place the chicken breasts in a 9x13 baking dish.

8. Bake, uncovered, for 25-30 minutes or until chicken is cooked through.
