Should you have a Dutch oven in your kitchen? Chef Jeremy says yes!

Big bold flavors are built using tried and true techniques with the right tools. But take note, you don’t need to spend a ton of money when shopping for a high quality Dutch oven.

Look for the following:
- Heavy cast iron core with sides and lid as thick as the bottom (provides optimal heat retention and distribution)

- High quality enamel coating on interior and exterior surfaces (no need to season the iron or worry about rusting. Also aids in clean up and reduces sticking)

- Buy one size larger than you think you’ll need (its always better to have a bit more bottom surface area and interior volume than needed)

3 Tips for Wild Rice Soup 🥣

1. Reduce the fat and retain the “creaminess” by cutting the amount of heavy cream and adding some roux.

Pro Tip: Roux will not fully thicken a liquid until it reaches at least 185 degrees. Bring your soup up to a simmer (little bubbles) after the roux is added to ensure proper thickening.

2. Milk and cream are emulsions. If heated improperly, the protein will coagulate and separate from the other components, resulting in clumpy curdling and/or a thickened coat on the bottom of your pan.

Pro Tip: Turn the heat off and stir in the milk/cream just before serving. If you must heat a dish containing dairy, use a low heat and stir frequently.

3. Use this dish to load up your family’s veggie consumption by adding just about any veggies you’ve got.

Add things like root vegetables (turnip, rutabaga, Beet, Celeriac) along with winter squashes and cabbage early in the cooking process to ensure they become tender. Add naturally tender veggies (bell pepper, asparagus, zucchini, broccoli) a little later to ensure they cook without becoming mushy.

Pro Tip: Soups, stews and braises are a great way to use up that veggie that may have become slightly wilted or past its prime instead of throwing it out.

Reminder: DON’T skip out on washing your produce ❌

The EWG () has a list called the “Dirty Dozen” which includes produce that has the highest amount of pesticide residues - make sure you’re washing these and choosing organic when you can.

How to wash? 💦
The FDA doesn’t recommend “Produce Washes” because they can leave residue on the food. Opt for a cold water scrub or soak in a baking soda/water solution for 15 mins, or 10% vinegar for 20 mins.

Does your blender bowl get jammed-up halfway down the bowl, leaving the blade uselessly spinning freely below the food?

You’d be surprised how many people tell me they have this problem!

Whatever you do, DO NOT try to jam the food down towards the blade with a spoon/spatula, or even worse, your fingers.

Simply add the food in batches, starting with liquid ingredient (water, milk, honey, maple, vinegar), then add the high moisture ingredients, like (peppers, zucchini, garlic, melons, berries). Run the blender to puree. Stop the blender, add the more dense or dryer ingredient, like root vegetables, grains, and herbs. Run the blender, and voila the already liquified ingredient will pull the others down and into the puree.

Feeling tired or wired after your morning meal?

The word breakfast literally means to break your fast after a nights sleep. It’s your first meal of the day and your first opportunity to nourish your body!

Which means what you eat for breakfast is important, as it impacts your blood sugar and can set the tone of your day.

Keeping your blood sugar balanced throughout the day is extremely important! Especially if you are trying to lose weight manage what you’re eating, support your brain health, energy & more. Why? If you eat foods high in added sugars, it’ll cause your blood sugar to spike and then crash, sending you into a carb-craving frenzy and the potential to eat WAY more than you originally intended. Which then can lead to another sugar-spiking meal and the cycle continues. Too much of this elevated blood sugar pattern can lead to weight gain, chronic inflammation, and disease.
