Getting kids to eat more fiber and protein (and less junk) is a daily struggle. But these 5-ingredient peanut butter (or almond butter) date balls by Minimalist Baker? Total win. Here’s what in the ones I made: dates, almond butter, chia seeds, rolled oats, dark chocolate chips.

🌱✨This week I had the incredible opportunity to speak at the San Diego chapter headquarters about a topic I love—gut health! ✨🌱
Did you know our gut bacteria love fiber? Think of it as their fuel to keep our microbiome balanced and healthy. And one of the easiest ways to add fiber to our diets (even for kids!) is with a simple, fiber-packed chia seed pudding. 💪💚
Here’s the recipe I shared with the Girl Scouts: 🥄 2 Tbsp chia seeds +
🥛 1/2 cup plant-based milk (or milk of choice)
(Yes- that’s it!)
1️⃣ Mix chia seeds & milk in a container
2️⃣ Stir well, wait 10 minutes, then stir again to prevent clumps
3️⃣ Refrigerate overnight
In the morning, it’s ready to enjoy! Top with dried fruit, nuts, or granola for extra fun and nutrients. 🌈 This little pudding packs 10 grams of fiber and is what I call a “fiber bomb.” It’s easy enough for kids to make on their own and perfect for keeping our guts (and taste buds!) happy. 😊🌿

Spoke about pediatric sleep and stress management to a class of PA students today and when I did a quick poll about how much they were sleeping, the average was 7-8 hrs! I was surprised because that was definitely not me as a student, so asked if they prioritized sleep because of Lifestyle Medicine being integrated to their curriculum and they said yes!
👏 👏👏 for creating a culture where your students to take care of themselves too.

Ever tried adding a vibrant twist to your avocado toast? 🥑✨ My kids loved this when we were traveling in Santa Barbara at and I had to recreate the magic at home! Let’s talk about pickled red onions - not only do they add a stunning pop of color to your dish, but they’re also packed with anthocyanin, offering incredible health benefits.

Making pickled red onions is easier than you think and it’s a fun little kitchen project for the kids too! Adding that tangy crunch to your avocado toast elevates it to a whole new level of yum.

Ingredients are thinly sliced red onions, white vinegar, sugar and salt. I use the recipe.

Starting your day with a nutritious twist? 🍎✨ Let’s talk about air fried apples for breakfast, topped with nuts for that extra crunch and plant boost!
Here’s the easy recipe:
✅ Chop apples
✅ Drizzle honey and top with cinnamon (I like Penzey’s)
✅ Cook in air fryer at 350 degrees for about 10 min.

Aiming for that 30 plants per week goal can be delicious and simple.
And guess what? I’m on a journey to learn how to make homemade soy yogurt 🌱. Still refining the process but will share once it’s just right. How are you adding more plants to your meals? Share your plant powered breakfast ideas below! 🌿

🌈 + 🌱 + 🥞! St. Patty's Day is the perfect time to make RAINBOW SPINACH PANCAKES. Not only is this recipe fun and festive, but it's packed with phytonutrients and fiber with the chia seeds and spinach hidden inside. This recipe is plant-based and does not contain bananas if your child is allergic or not a fan. Do you think your kids would try this? 🍀🍀🍀

RAINBOW SPINACH PANCAKES RECIPE (Makes 8)

Wet ingredients
1.5 cups baby spinach (loosely
packed)
2/3 cup non-dairy milk
2/3 cup unsweetened applesauce
1 TBS apple cider vinegar
1 tsp vanilla

Dry ingredients
1 cup flour (oat, wheat, or GF all
purpose)
1 TBS chia seeds
1 TBS baking powder
1 TBS coconut sugar
1/4 tsp sea salt

Optional (to make a fruit rainbow)
1/2 cup chopped strawberries
1/2 cup chopped mango or banana
1/2 cup sliced green grapes
1/2 cup blueberries or blackberries

DIRECTIONS
Heat griddle to 300 degrees.

Add all the wet ingredients (spinach, non
dairy milk, applesauce, apple cider vinegar,
vanilla) to a blender. Blend on high speed
until you can no longer see green particles.

Mix the dry ingredients in a separate bowl
with a whisk (flour, chia seeds, baking
powder, coconut sugar, sea salt).

Add the contents of the blender slowly into
the bowl with the dry ingredients and mix
together. Let sit for 5 minutes.

Ladle the batter on the griddle. Flip when
edges are cooked and bubbles are forming
in the middle.

Serve immediately or freeze up to 2
months. Separate portions with parchment
paper.

Optional: Serve with fruit arranged like a
rainbow with a pancake on each end (like
clouds).

NOTE: Cooking these on low heat helps them stay green!

These candied pecans are so easy to make that even if you wouldn’t consider yourself that great in the kitchen, you can do it. Made these healthier candied pecans for my coworkers as gifts using found in an effort to be both cute and ! Used labels to give them a personalized touch.
