🧆Sesame Seed Balls with Red Bean Paste🧆

PREP TIME 30 MINS
COOK TIME 10 MINS
TOTAL TIME 40 MINS
SERVINGS 10 BALLS

INGREDIENTS

Pumpkin dough:
100 gr pumpkin puree
100 gr glutinous rice flour plus more as needed
25 gr sugar
Hot water as needed, you may not need it

Filling:
150 gr red bean paste
Flour paste:
1 Tbsp glutinous rice flour
3 Tbsp water

For coating:
1 cup white sesame seeds untoasted

For frying:
Oil enough for deep-frying

INSTRUCTIONS

For the filling:

1. For sweet red bean paste: divide the bean paste into 10 portion, about 15 grams each. Oil you palms with a bit of cooking oil and roll the bean paste into balls

Prepare the dough:

1. Cut the pumpkin into chunks and steam for 10 minutes until fork-tender. Mash while it's still hot. If you are using canned pumpkin puree, heat it up in the microwave on high for a minute or heat it up on the stove or steamer until they are hot. Add sugar and flour and mix while they are still warm with a spoon at first and then knead into a smooth dough. It's important for the pumpkin to be warm so the dough won't break easily

2. If the dough is too sticky, you can add a bit more glutinous rice flour until you can get non-sticky smooth dough. If the dough feels dry, you can add a bit more of the hot water

Shaping:

1. Divide the dough into 10 balls, about 30 grams each. Keep them covered and work with one at a time
Take one ball and use your thumb to make a well in the center of the dough and work on widening the well to fit the filling in there. Put 1 red bean paste ball

2. Gather the edge to enclose. Pinch to seal and then roll the dough ball in between your palms to make it smooth. Make sure the dough ball is smooth with no cracks so the filling won't leak out during filling. If the dough becomes dry when you wrap, dab with a bit of water and you should be able to roll it smooth again. Repeat with the rest

3. Prepare the flour paste by mixing the flour and water together. Roll one dough into the paste and then roll into the sesame seeds. Repeat with the rest

Deep frying:

1. Preheat your fryer with about 3-inches of oil over medium heat. If you put a skewer into the oil and there are bubbles around it, the oil is too hot. Lower the heat and wait for 3-5 minutes before frying

2. Gently place the sesame balls into the oil. You may need to do this in 2-3 batches. The sesame balls will sink to the bottom at first. Use a spoon to keep them moving and turning them around so they fry evenly and don't get burn in certain spots. When you fry them over low-medium heat, the balls have lower chance of exploding and fry evenly

3. Once they are crispy on the outside and lightly golden brown, remove and place on an absorbent paper towel

4. If you want them to stay crispy longer, you can fry for second time after resting for at least 10 minutes. The second round of frying happens quickly. The balls will darken much faster, so you want to make sure you only fry for a minute or less over medium heat. Remove from the hot oil and put on absorbent paper towel

Air-frying:

1. Preheat your air fryer at 320 F (160 C) for 5 minutes. Brush the jian dui with some oil and put in the air fryer basket. Air fry for about 15 minutes. Then increase the temperature to 350 F (180 C) and air fry for another 15 minutes or until lightly golden brown. The timing is just for reference. Check on them once or twice in between. They should be crispy on the outside and just lightly golden brown

🥖Gluten-free Hot Cross Buns (Dairy Free)🥖

INGREDIENTS

Please measure by weight for accuracy
For the dough:
100 gr mashed potato
80 gr tapioca flour
120 gr soymilk/almond milk
10 gr oil
120 gr rice flour
5 gr active dry yeast
30 gr sugar
½ tsp salt
50 gr raisins optional

Spices:
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp ground cloves

Egg wash:
1 egg yolk
1 tsp water

For the glaze:
10 gr sugar
10 gr hot water

For the icing:
60 gr icing sugar
water as needed

INSTRUCTIONS

Prepare mashed potato:

1. Get about 200 grams of potato or more if you don't mind some leftover. Peel the potato and cut them into small chunks, about 2 inches roughly. You can pressure cook the potatoes on high pressure for 5 minutes or steam them over high heat for 10 minutes. You can also boil them in a pot. Cover the potatoes with some water. Bring to a boil and then lower the heat to let them simmer for 10-15 minutes or until you can easily mash with a fork. Drain off water and put the potatoes back in the pot to let them dry out a bit

2. Mash the potatoes while they are still warm. You want to make sure you mash them finely as we will use this in the dough

Prepare a dough "goop":

1. Get 30 grams of tapioca and 30 grams of milk and mix them to make a slurry. Set aside

2. Combine sugar, 40 grams of the potatoes, 90 grams of milk and oil in a saucepan. Bring to a simmer and then turn off the heat. Add the tapioca slurry you make earlier and keep stirring to combine. Turn the heat back on low-medium and keep stirring until it thickens into like a goop. Remove from the heat and set aside to let it cool down until it is lukewarm (so we won't kill the yeast later)

Prepare the dough:

1. Combine yeast, rice flour, the spices, the lukewarm dough paste, salt, raisins (if using), and the rest of the milk and mashed potatoes. Knead into a dough. Divide into 12 equal pieces of smaller dough balls. Arrange them on a baking sheet lined with parchment paper. You can arrange them next to each other (they won't rise a whole lot)

Proof the dough:

1. Cover the shaped dough with a damp tea towel. I mist them with a bit of water. Let them proof at a warm place until the dough feels light and puffy. They won't double in size. It takes about 1 hour when I use my oven's bread proof function. It may take you longer if the temperature is lower

Bake:

1. 10 minutes before the end of proofing, remove the dough from the oven if you use your oven to proof the bread. Preheat the oven to 350 F (180 C) for a conventional oven. Put 2 cups of water in a heat-proof pan underneath the rack you are going to bake the buns. Let the water heat up together with the oven

2. Prepare the simple glaze by mixing sugar with hot water to dissolve the sugar. Set aside. You can also use apricot jam mixed with a bit of water

3. Mix the yolk with water to make an egg wash. Brush the top with the egg wash. Bake in the middle rack for 20-25 minutes. Remove from the oven and immediately brush with the glaze. Let them cool down on the pan for about 10 minutes

Prepare the icing:

1. Put icing sugar in a bowl and start adding 1 teaspoon of water. The consistency should be thick but pipeable. Transfer to a plastic bag and then cut off the tip. Pipe a cross pattern on the top of each bun

Serve:

1. The buns are best served while they are still warm. Like many typical gluten-free bread/buns, they will harden once they cool down completely. Simply reheating for a few seconds in a microwave will soften them
