Mom's Low Carb Meatballs Recipe 🍝

3 meatballs = 1 net carb!

INGREDIENTS

• 1/2 pound ground beef chuck, 85 % lean

• 1/2 pound ground pork (or turkey or veal)

• 1/4 cup Parmesan cheese, grated

• 1/4 cup heavy cream

• 1 large egg, beaten

• 2 tbsp minced fresh parsely

• 1 tbsp finely grated onion (it will be mush)

• 1 clove garlic, grated (small - medium in size)

• 1/2 tsp salt

• 1/4 tsp pepper

OPTIONAL: SAUCE

• 2 cups Rao's Marinara Sauce (or your favorite low carb sauce)

INSTRUCTIONS

• Add the beef and pork to a medium bowl and break up into smaller chunks, aiming for an even mix.

• Add the remaining ingredients to the meat and mix with a hand mixer until just combined. Do not over-mix.

• Lightly oil hands and roll 12 meatballs. I weigh mine to get the weights equal for even cooking. To do it by eye, divide the meatball mixture in half and roll 6 meatballs of even looking size and repeat with the remaining meat.

TO PAN FRY MEATBALLS:

• Heat a large frying pan over medium heat. I use a Green Pan, but an iron skillet or stainless steel pan will do (they will need more oil). When hot, spray the pan with oil (use 2 teaspoons for iron or stainless). Add the meatballs to the pan, making sure they each have their own place. [DO NOT crowd the pan. If your pan is small and you add all of the meatballs, they will steam and be tough. If your pan is large, you can fit all 12 in the pan.]

• Cook the meatballs approximately 1 1/2 minutes per side, turning at least 4 times. I use tongs to gently roll them over. Cook for 10-15 minutes total. They should be browned like the picture in the post.

• Heat the sauce in the pan, scraping up the brown bits for a full flavored sauce. For a fresher tasting sauce, warm on the stove or in the microwave and pour over the meatballs. Garnish with parsley and serve or top with mozzarella cheese and place under the broiler to melt.

TO BAKE MEATBALLS IN THE OVEN:

• Pre-heat oven to 400 degrees F and position rack to the middle. Place meatballs on a foil-lined or rack-lined baking sheet. Bake meatballs for 15-20 minutes. Serve with warmed sauce and garnish with chopped fresh parsley. Alternately, top with mozzarella cheese and place under broiler to melt the cheese.

I haven’t shared my weight loss story and progress in a while. The first pictures were taken on January 7, 2019 when I first started the 10 Day Ketone Challenge, where I would drink a pack of pure exogenous Ketones each morning and eat low carb meals. Little did I know that this challenge would change my life! In the first picture, I was at the heaviest I had been since I was pregnant. I felt horrible about myself, was tired all the time, and just ashamed that I had let myself gain so much weight. I was not the person that I wanted to be.

When I started drinking Ketones, I first noticed how much more energy I had. Not only did I have enough energy to get through the day, but I actually had energy to exercise. It also curbed my appetite and cravings for junk food so I could stay on track with my low carb lifestyle. The fact that I do not have to be perfect with my diet because drinking the ketones puts me into Ketosis within an hour, is a tremendous help!

Once this stay at home order started, I was initially worried that I would fall back into bad habits and would start eating a lot more from boarding and stress. I have been continuing to drink my ketones each morning and it has helped give me the self control and determination that I needed to stick to my low carb lifestyle and workout routine.

My fat loss journey has not been a straight line. I have gained and lost some of the same pounds, but all in all, I have continued to stay focused on my goals. The after picture was taken today. When I look at those pictures, I feel incredibly accomplished and proud of myself!!

If anyone is struggling with losing weight, lack of energy and focus, or just needs a new routine to get into, I strongly encourage you to try this challenge and see what amazing results you can get! Love that I can eat shrimp Alfredo on Keto 🙌 Instead of pasta Make it over spaghetti squash. Perfection 👌

Keto Alfredo
Ingredients:
1/4 stick butter
1 cup heavy cream
salt and pepper (to taste)
3/4 cup Parmesan (grated or shredded)

Directions:
1.Melt the butter in a saucepan.
2.Add the cream, with pepper and salt. Bring to the boil then simmer for 5 minutes.
3.Add the Parmesan, 1/4 cup at a time, stirring to incorporate.

*Makes about 1 1/4 cup. 9.5g net carbs for entire recipe. 2.4g per serving based on four servings.

There are 2 ways to get ketones into your body

Keto snickers brownies!! Have I died and gone to heaven?!? 🤤 😋

Ingredients

Ingredients- Brownie Base:
* 1/2 cup butter melted
* 2/3 cup granular sweetener
* 3 large eggs
* ½ teaspoon vanilla extract
* ½ cup almond flour about 50g
* 1/3 cup cocoa powder
* 1 tbsp grass-fed gelatin
* ½ teaspoon baking powder
* ¼ teaspoon salt
* 1/4 cup water
* 1/3 cup sugar-free chocolate chips, optional
Peanut Butter Fudge:
3/4 cup peanut butter
6 tbsp butter
1/2 tsp vanilla
1/4 tsp salt
3/4 cup powdered swerve sweetener sifted
Chocolate Glaze:
1/2 cup heavy whipping cream
1 1/2 ounces unsweetened chocolate finely chopped
3 tbsp powdered swerve sweetener
1/4 tsp vanilla extract
Instructions

For Brownies:

1. Line an 8×8 inch baking pan with parchment paper, with an overhang for easy removal. Preheat the oven to 350F and grease an 8×8 inch baking pan.
2. In a large bowl, whisk together the butter, sweetener, eggs, and vanilla extract.
3. Add the almond flour, cocoa powder, gelatin, baking powder, and salt and whisk until well combined. Stir in the water to thin the batter. Stir in the chocolate chips, if using.
4. Spread the batter in the prepared baking pan. Bake 15 to 20 minutes, until the edges, are set but the center still seems a tiny bit wet.
5. Remove and let cool in the pan.
For Peanut Butter Fudge:

6. In a small saucepan over medium heat, melt together peanut butter and butter. Stir in vanilla and salt.
Stir in powdered Swerve a little at a time until the mixture thickens to a spreadable consistency. Spread over cooled brownies and refrigerate 1 hour, until set.

For Chocolate Glaze:

In a small saucepan, heat the cream until just simmering. Remove from heat and add the chopped chocolate. Let sit 5 minutes to melt.
Add the sweetener and vanilla and whisk until smooth. Let sit a few minutes to thicken, then spread or drizzle over the peanut butter layer.
Lift brownies out by edges of parchment paper and cut into squares.

A balanced health regimen includes a solid hydration plan. The benefits of hydration range from glowing skin to essential organ functionality, but water alone does not provide absolute optimal hydration.
👉🏻While H20 consumption is vital to the inner workings of the human body, drinking tons of water every day is actually not the best way to ensure that the H20 is being absorbed and utilized in the best ways possible.
Enter: electrolytes.
Electrolytes are minerals in your body that have an electric charge (either positive or negative). They are in your blood, urine, tissues, and other body fluids. When these minerals dissolve in a fluid, they form electrolytes — positive or negative ions used in metabolic processes. These charges have two main functions: Regulating the flow of water in and out of cells and sparking nerve impulses.
Electrolytes found in your body include:
•Sodium
•Potassium
•Chloride
•Calcium
•Magnesium
•Phosphate
•Bicarbonate
For example, a muscle needs calcium, sodium, and potassium to contract. When these substances become imbalanced, it can lead to either muscle weakness or excessive contraction. The heart, muscle, and nerve cells use electrolytes to carry electrical impulses to other cells.
Electrolytes are important because they help:
•Balance the amount of water in your body
•Balance your body's acid/base (pH) level
•Move nutrients into your cells
•Move wastes out of your cells
•Make sure that your nerves, muscles, the heart, & the brain work the way they should
Disturbances in electrolytes can have a harmful effect on your health and can even be fatal in rare cases. If you have a mild electrolyte disturbance, you probably won’t experience any symptoms.
More severe imbalances can cause:
•Fatigue
•Fast or irregular heartbeat
•Numbness & tingling
•Confusion
•Muscle weakness & cramping
•Headaches
•Convulsions
Electrolyte imbalances most commonly occur when people are severely dehydrated due to vomiting, diarrhea or excessive sweating. Severe imbalances can interfere with the way your body functions!

🎃 Pumpkin Spiced Donut Holes.. that’s gonna be a big YES for me!

You’ll want to grab our BOGO Pumpkin Spice Keto Kreme to make these babies ⬇️ Available til midnight tonight. Doubles as a creamer (think removing your j***y, sugary creamer for fat burning creamer) and to make SO many delish recipes 😋

Makes 16 donut holes. Per 1 donut hole: 16.4g Fat, 4.5g Protein, 2g Net Carbs, 173 calories

Ingredients:

2 1/2 cups Almond flour
1/3 cup Erythritol
2 tsp baking powder
1/2 tsp Vanilla extract
2 large Eggs
1/2 tsp Sea salt
1/4 cup butter, melted
1/4 cup unsweetened almond milk
1 packet KETO//KREME® Pumpkin Spice
OR
1 tsp Cinnamon
1/2 tsp. Nutmeg
1/2 tsp. Cloves
1/2 tsp. Ginger

Cinnamon Sugar Coating Ingredients:

6 tbsp unsalted melted butter
1/2 c granulated swerve
1 1/2 tbsp ground cinnamon
Powered swerve for dusting

Instructions:

1. In a large bowl, stir together the almond flour, erythritol, baking powder, KETO//KREME® Pumpkin Spice (or cinnamon, nutmeg, cloves, ginger) and sea salt.
2. In a separate small bowl, whisk together the 1/4 c melted butter, almond milk, eggs, and vanilla extract.
3. Add wet mixture into the dry mixture. Stir to combine.
4. Form dough into 1” balls and place on baking sheet lined with parchment paper.
5. Bake at 350F degrees for 11-13 minutes, or until a toothpick inserted into the donut hole comes out clean.
6. Let cool for five minutes.
7. Add the melted butter to a small bowl.
8. Add the cinnamon and sugar substitute to a separate bowl and mix together well.
9. Take each donut hole and dunk it into the melted butter, making sure it is fully coated.
10. Then dip it into the cinnamon and sugar substitute mixture, making sure to coat well.
11. Dust with powered swerve.
