🍓🍦Strawberry Frozen Yogurt Bark

Follow me for more easy & nourishing recipes 🍦

A refreshing treat in less than 10 minutes that you need to try this summer! This recipe uses less than 10 ingredients that you probably already have laying around.

Ingredients:
• 6.5 oz chocolate chips (about 1 1/4 cup)
• 1 tsp coconut oil
• 1/2 cup Greek yogurt, plain or flavoured (vanilla
or strawberry would be great)
• 1/2 tsp vanilla extract
• 1 cup frozen strawberries
• 1 tbsp honey (you can leave out if using flavoured yogurt)
• 1 tbsp milk of choice
• pinch of salt
Method:
1. Line a baking sheet with parchment paper and set aside. Melt the chocolate and coconut oil using a double boiler or the microwave in 15 second increments.
2. Once melted, pour onto the middle of the parchment lined baking sheet and spread out the chocolate in a circular shape using a rubber spatula.
3. Place in the freezer for 5-10 mins.
4. While the chocolate is in the freezer blend the remaining ingredients in a high speed blender.
5. Take the chocolate out of the freezer, pour the strawberry frozen yogurt over top and spread it out over the chocolate.
6. Top with more chopped strawberries, white chocolate or toppings of choice.
7. Remove from the freezer, chop into pieces and store frozen in an airtight container or freezer bag. Enjoy!

After the holiday season, some of us may be wondering what to eat. After a holiday surrounded by food, we may be feeling uninspired in the kitchen, sick of cooking or thinking about food, but still want to fuel with satisfying feel-good meals. ⁠⠀
⁠⠀
Rather than focus on what not to eat, think about what we can ADD to our meals to make them more balanced to make us feel our best. Swipe for three ways to add balance to your meals!⁠ 👉🏻⁠⠀
⁠⠀
1. Ways to add fruits & vegetables:⁠⠀
- Add to tomato sauce⁠⠀
- Include a side salad with a great vinaigrette (get out my Maple Cider Vinaigrette on my blog!)⁠⠀
- Roasted in your favourite spices and herbs for a side dish⁠⠀
- Add ½ cup to an omelette⁠⠀
- Lookup a recipe using a vegetable you’ve never eaten before to try something keep and keep it interesting!⁠⠀
⁠⠀
2. Ways to include a protein source:⁠⠀
- Use leftover lean meats for sandwiches such as chicken breast or turkey.⁠⠀
- Prep some protein foods in advance to have on hand, like hard-boiled eggs, marinated tofu or chicken breast. ⁠⠀
- Keep convenient protein foods in your pantry like canned beans, canned tuna, nuts and seeds. ⁠⠀
- Keep frozen edamame on hand to use to top salads.⁠⠀
- Add lentils, chickpeas or black beans to soups. ⁠⠀
- Top a breakfast muffin with almond or peanut butter. ⁠⠀
⁠⠀
3. Ways to add healthy fats:⁠⠀
- Have ¼ cup nuts with an apple for a snack. ⁠⠀
- Use olive oil in your vinaigrette for salads. ⁠⠀
- Cook with olive or avocado oil. ⁠⠀
- Mash avocado on a piece of toast and top with a fried egg for breakfast. ⁠⠀
- Dip veggies and crackers in guacamole for a snack. ⁠⠀

With the second wave of the pandemic in full force and the business of the holiday season, you may be trying to avoid the grocery store and the long line ups we've seen over this past year. Even in normal times, the weeks leading up to Christmas can make grocery stores crazy busy!⁠

I've put together this post (with more to come) on unique ideas on how to use common pantry staples: nuts & seeds edition! Pantry staples are great for many reasons, they tend to be nutrient-dense and very versatile, and most importantly, last ages in the pantry. ⁠

We are always hearing about the health benefits of including nuts and seeds in our diet, and for good reason! Nuts and seeds are basically tiny powerhouses of nutrients, they contain fibre, various types of unsaturated fats, B vitamins, vitamin E (antioxidant properties and good for skin and hair), and many minerals. ⁠

Italian Turkey Stuffed Peppers 🤩⁠

Stuffed peppers are one of my all-time favourite dishes. They remind me of my nonna, and I will forever be trying to replicate her recipe. The problem is, her recipe is not written down and she always conveniently "forgets" to tell you about an ingredient or two when you ask about them. These stuffed peppers are a twist on her recipe (at least on the ingredients I know about 😉). ⁠

This recipe is made with ground turkey, brown rice, and lots of tomato sauce and cheese! Hearty, nutritious, and can easily be made ahead for a quick weeknight dinner. ⁠

Crispy Roasted Chickpeas that are actually crispy! (With two spice blends to try!)⁠

The perfect savoury snack for those who love the crunch! One of the best things about this recipe is you can swap out seasonings to whatever you have on hand or your preference! I included two different spice blend options in this recipe:⁠

- Everything Bagel Seasoning⁠
- Cumin Herb Spiced⁠

Back with another kitchen hack to make cooking quicker and easier ✅ Swipe 👉🏻to check out my Hack the Kitchen Tip #3! ⁠

Did you know it's best to store fresh ginger root in the freezer? This tip is not to increase the shelf life (although this is a bonus), but to make peeling & grating easier and faster!⁠

Simply place it in a sealed plastic bag or airtight container and freeze!⁠

- Bonus tip: after it's frozen, peel with the edge of a spoon. A knife or peeler usually wastes a lot of the ginger along with removing the skin. Using a spoon is super quick and perfectly removes the delicate skin without wasting all your precious ginger. ⁠

- Grate like normal, except you will notice it's easier, quicker, and works 10x better! You won't get all the fibrous strings left behind like you get when grating it fresh. You will get a very uniform and fine grate, allowing the ginger to perfectly mix with sauces and marinades. ⁠

My only complaint about this tip is your hand gets hold while grating 🥶⁠

These Pecan Crusted Chewy Gingersnap Bites are the perfect snack or dessert with all the seasonal flavours - pecans, ginger, and delicious caramel-like dates.

These gingersnap bites get their chewy texture mainly from the dates. They are then rolled in roasted and chopped pecans for the perfect crunchy coating. I also rolled a few in turbinado sugar for an authentic gingersnap cookie feel – optional but I highly recommend you do the same!

Back after a little break! Last week I wrote the Canadian Dietetic Registration Exam- the last step to securing my Registered Dietitian title. I recuperated by taking a little social media break, but of course, I couldn't take a break from cooking! The kitchen is seriously my happy place- a dietitian's natural habitat 👩🏻‍🍳 This week I have some great recipes to share with you all as a result! ⁠

You need to try this Acorn Squash & Pomegranate Kale Salad with a White Wine Pomegranate Vinaigrette, the perfect seasonal dish. All the ingredients to a delicious salad are included – nuts, cheese, a complex carb and a delicious vinaigrette pairing! Even more, the pomegranate seeds provide the perfect tart-sweetness to balance out the savoury toppings. 🥗 Seriously the best salad ever. ⁠

White Bean Pumpkin Hummus with Fried Sage Leaves 🧡🌱

I think this may be my new favourite "hummus" recipe!
A unique take on the traditional hummus, this recipe uses white beans rather than chickpeas, pumpkin for an earthy and seasonal flair, and a fresh herby flavour from the fried sage leaves.

Packed with plant-based protein and fibre, this is a great addition to your snacking rotation to keep fuelled all day. 💪🏻

Besides the healthiness- this is a great seasonal appetizer to serve at our socially distanced holiday dinners. It feels a little fancier than the typical hummus, and packs in so much flavour.

Save this post for when you need browned bananas instantly 👉🏻

Ever craved a freshly baked banana bread but had to try wit days for your bananas to brown? - the worst! Since I just shared my marbled chocolate banana bread, this tip will help you make banana bread anytime- even when your bananas aren’t sufficiently browned yet!

When on the green side, they do not mash well or provide the proper taste and sweetness that is needed if the recipe indicates using browned bananas.

You’ll never have to wait again with this kitchen hack 👩🏻‍🍳

• Baked method:
Preheat your oven to 300F.
Place your bananas (with the peel still on) on a baking sheet.
Bake for 15-30 minutes depending on how ripe the bananas are, until deeply browned and the peel starts to look shiny.
Remove from the oven and allow to cool. Open up the peels to release the heat and put into the fridge to speed this part up.

• Microwave method:
*Note this method does not improve the flavour or sweetness of the bananas. You may need to increase the sugar content of the recipe to make up for it!

Poke a few holes in the skin of the banana to allow steam to be released.
Microwave them on a plate for 30 seconds. If it is not soft enough, repeat for another 30 seconds until softened. Allow to cool.

I prefer the baked method because it helps to sweeten the bananas rather than just soften them. Check out my Healthy Marbled Chocolate Banana Bread at the link in bio 👆🏻
