Here is the recipe ! It’s pretty close in taste and texture with the chia smash!

170 grams raspberries (small container)
2 tbsp chia seeds
30 grams medjool dates
1 tsp lemon juice

Place all in a saucepan and cook on low stirring continuously. Once dates have melted down, start smashing ingredients with a spoon . Continue to cook on low 5 more minutes. I then used my emulsion blender to break it all down . Let stand, add to a mason jar and add to refrigerator.
Enjoy!

Costco is no longer carrying this chia raspberry smash🥹. I refuse to pay the same amount for half the size at Whole Foods . So I started working in a duplicate of my own . I think I nailed it ! Look for the recipe coming soon !!!!!

This just checked all the boxes and was rediculously filling !

I wanted to share this amazing buffalo chicken salad I came across on instagram!
It makes 8 servings! Put in in a wrap, sour dough, in a pita, on a bagel or have it as a dip with a portion of tortilla chips

1 lb cooked ground or shredded chicken
448 grams celery diced small
200 grams chopped cabbage
150 grams ( 1 large or three small red bell peppers)
75 grams shredded carrot
100 grams diced red onion
3 grillo pickle spears diced fine
Combine the above ingredients

Sauce
1/2 cup good culture lowfat cottage cheese
1/2 cup fage 0 Greek yogurt
50 grams franks red hot sauce
3 tbsp apple cider vinegar
1 tbsp ranch seasoning
Stir mixture into chicken/veggies

Cover for a few hours and refrigerate
It’s super filling for summer lunches or dinners !

If you are ever in Islamorado Florida, I highly recommend The Square Grouper for dinner. The atmosphere is amazing and the food well this celiac girl was so happy . From the heirloom cauliflower for my app and almond crusted grouper with mashed sweet potatoes and perfectly cooked green beans for dinner . The finisher had my eyes so big and happy ! Gf peanut butter chocolate chip cookies and Tahitian vanilla ice cream . Rediculously delicious meal and dessert!
Another great restaurant with gf options including a dedicated fryer was the Twisted Shrimp! Excellent service and delicious lunch !

New product finds st Costco! The one company I trust for gluten free oats has a granola now at Costco . Price point is really good!
Smash foods Raspberry preserves ! Ingredients are super clean !
Fit joy gf pretzels! Perfectly portioned and delicious.

Salted caramel protein bagels !

1 cup gf flour
1 cup whipped cottage cheese ( i took low fat good culture cottage cheese and ran it through food processor )
2 scoops phormula 1 salted caramel protein powder
1/2 tsp baking powder

Mix together and form a disc . Cut into 4 pieces . Roll each into a ball, then flatten a bit and pop a hole in middle. Place on silicone or parchment paper lined cookie sheet. Sprinkle with cinnamon and a pinch of coconut sugar.
Place into a 350* oven for 25-35 min.

200 calories each
19 grams grams protein
6 grams carbs
8 grams fats
2 grams fiber.

Here is the base recipe for both my waffles and pancakes

1/4 cup pancake mix ( I use gf Kodiak pancake mix)
1/4 cottage cheese (I use low fat good culture)
1/2 cup egg whites

*optional 1 serving protein powder
I use either 1st Phorm phormula 1 salted caramel or clean simple eats vanilla

I then use my emulsion blender to get rid of cottage cheese lumps😜

I mix a combo of 1 tbsp pbfit and 6 grsms peanut butter and a little water to get it to a drizzle consistently

The filling:

3/4 cup fage 0 yogurt
1/2 scoop protein( I used phormula 1 salted caramel! My favorite)
1 tbsp pbfit
Mix and refrigerate

60 grams or half of an apple slices very thin . I used the scary mandolin!

Layer apple slices and sprinkle 6 grams of almond butter . Now go to town ! This checks all the boxes ! You have protein, healthy fats, fiber and healthy carbs! It’s delicious and very filling ! Plus it slaps that sweet monster in the face !!

My vanilla creami recipe!

1 cup unsweetened almond milk
2 tbsp good culture low fat cottage cheese
7 grams sf vanilla pudding mix
1 scoop vanilla protein
1/2 of a soaked date
1 scoop 1st PHorm vanilla collagen
Using emulsion blender mix this up !
Freeze overnight
Add to creami machine on 2 spins light ice cream. Enjoy !

This stuff is so delicious! I add it to my creami and yogurt!
🍫Preheat oven to 350 and add parchment paper to a cookie sheet !
In mixing bowl add:
🍫2 cups one degree organic sprouted oats
🍫1 scoop of phormula 1 salted caramel protein ( 1 scoop of protein of choice like a vanilla or salted caramel)
🍫1 tbsp navitas cacao powder
🍫1 cup Whole Foods 365 gf brown rice crisp cereal ( it gives it a little more of a crunch )
On stove top in a small pan add:

🍫1/3 cup organic honey
🍫1 tbsp vanilla extract
🍫1 tsp extra virgin olive oil ( I use Terra delyssa! It’s one of the best !)
🍫Cook on low heat until it just starts to bubble and then pour into oat mixture. 🍫🍫Stir well so everything is coated!
🍫Pour onto parchment paper lined cookie sheet and add to oven for 15 min. 🍫Remove and let cool !

For 12 portions the weight is approximately 24 grams .
Fyi … it’s really good so portion it out and close the container 😜
