🌱VEGAN UM ALI🤤

Um Ali is a traditional Egyptian dessert and is the mother of all desserts. Who agrees with me? Drop a ✋🏼 below if you do!

It is usually made with milk and cream, butter and puff pastry topped with nuts and raisins

Check out my plant-based version below👇🏼

1 roll vegan puff pastry
500ml coconut milk
1 tbsp vegan butter or margarine
1 tsp vanilla bean paste
4 tbsp sugar or maple syrup
4 tbsp coconut cream
Dessicated coconut
Pistachios
Pulsed hazelnut
Raisins

Bake the puff pastry for 15 minutes at 200C fan or 220C

Heat the milk, vanilla, butter and sugar. Pour over the cooked pastry, top with coconut cream, nuts & dessicated coconut. Cook again for another 15 minutes and it's ready!

HOMEMADE VEGAN INARI SUSHI

I recently had vegan sushi from .uk and fell in love with the inari sushi and the soy miso sweet chilli sauce so I made it at home!

Inari is a deep fried tofu pocket and you fill it with sushi rice to make sushi

I used Amazon-bought inari and mixed brown & white sushi rice for a healthier balance

🤔Did you know that adding vinegar to rice reduces the glycaemic index (GI) of rice by 35%?

GI is how high your blood sugar rises when you eat a certain food so this is great tip for blood sugar balance

I've added shaoxing rice wine vinegar along with toasted sesame oil, sichimi togarashi, seaweed and light soy sauce to the sushi rice

Yoga makes me feel SO SO good in as little as 20 minutes. That is why I am so happy in this photo!

There are different types of yoga and they have a host of benefits including

CRISPY TEMPEH

Threw this recipe together on the spot and it worked!

Ingredients:

Low sodium light soy sauce
Grapeseed oil
Cornflour
Flour
Ginger powder
Dried coriander
Cumin
Cayenne pepper
Dessicated coconut
Mustard powder
All purpose seasoning

1 tbsp of flour and cornflour, 2 of coconut and 1 tsp of each spice.

Put the tempeh in the soy and oil mixture then into the dry mixture then bake or shallow fry in grapeseed oil until crispy (around 3-5 minutes)

I had this half a plate of salad, quarter of rice and a good ol' dollop of hummus

Enjoy!

🌟PLANT-BASED SPICY CHAI🌟

This went down a treat with the family as we watched the hail pour down in the garden from grey skies

This is the perfect cup of cosy!

Ingredients:

Oat milk
Tea
Fennel seeds
Cloves
Star anise
Ginger
Cinnamon
Cardamom
Vanilla bean paste
Maple syrup

A tsp of each per 1 mug of milk + teabag and simmer for 6-7 minutes but make it to taste! I love extra ginger in it so I add more

My go-to dessert is usually fruits and occasionally some oatgurt (oat yoghurt)

Fruits are full of antioxidants, fibre and healthy sugars that keep you full and satisfied

Always think of the rainbow when eating fruits - the more the colours, the better!

A serving of fruit is around 80g which is:

1 medium fruit (banana, apple)
2 small fruits (clementines)
1 handful of smaller fruits (berries)
30g of dried fruit = 2 tbsps

The minimum recommendation per day is 5 servings (400g) but some studies have shown that 10 servings (800g) are better at reducing disease risk

My journey inspired me to get my diploma in sports nutrition and another in fitness and weight loss *perpetual nerd alert* 🤓

POST-RUN ENDORPHINS

Just ran on my lunch break. It was so cold but so worth it!

🤔Did you know that aerobic exercise can reduce depression by 48%?

🤔And reduce mortality from all causes by 30%?

🤔And reduce breast and colon cancer by 20%?

And..and..and! I could keep going

✅How much do you need to do?

30-60 minutes daily

✅How hard?

Enough to be able to sing but not talk

✅How often?

At least 5 times per week

✅How to get this habit started?

Start by preparing your clothes for a workout or run a day before, lay them out to see and set an alarm!

ARE YOU FEELING CRANKY?

That makes two of us!

I've been quite busy and tired and cranky lately so it really prompted me to reflect inward and troubleshoot

I realised that I had been working alot and thinking/rethinking about my long to-do list with a partial loss of routine

We are all guilty of getting stuck in a task warp - am I right? 🤔

So what did I do to fix this?

✅Added 5 minutes of breathing meditation to my morning
✅Done morning or evening yoga daily
✅Gone for a 20 minute walk to clear my mind
✅Restarted reading a book before bed for at least 30 minutes

I needed to move more, manage stress and stimulate my brain. Boy do I feel much better already! 😆

But what is it that you need?

My advice is to reflect, try different things and see what makes you feel better physically, emotionally and mentally

🥞PANCAKE SUNDAY!🥞

I absolutely LOVED these plant-based pancakes made with Teff flour!

✅High in fibre
✅High in protein
✅Wholegrain
✅ Deliciously filling

These are an absolutely game changer. So healthy. So fluffy. They taste like heaven! 🤤

Recipe below 👇🏼 (makes 4)

1/4 cup teff flour
1/4 cup wholemeal flour
1/4 oats
1/2 cup plant m*lk
1 tbsp ACV
1/2 tsp baking powder
1/4 tsp bicarbonate of soda
1 tbsp oil
1 tbsp maple syrup
1 tsp cinnamon
Pinch of salt

Mix ingredients. Cook until bubbles appear on top, flip and cook for further 30 seconds. Top with more maple syrup and berries or whatever you like!
