I love Thai curry! This is a recent discovery and I was excited to make some for lunch today. All the veggies (minus the broccoli) came from my garden which is fun! John and I ate lunch, and then I strained all the vegetables onto rice for future lunches/dinner. I have a jar of the curry sauce leftover for a future meal, just need to add fresh vegetables! So yummy!! 😋

Today is Day 7! I have to say it’s been kind of a rough week, as we wrapped up summer and started school and just have been doing all the things!

Yesterday we went to dinner and a play, and it’s always nerve wrecking to go to a restaurant and stay on track! We went to The Cheesecake Factory and I looked up their menu beforehand. They had an amazing Vegan appetizer “Thai Lettuce Wraps with Grilled Avacado” I asked if I could have it be more of an entree (as I don’t think I could eat 1 1/2 avocados). I was delighted when the waitress said they had just added that size last week. I’m sure the 3 sauces had oil in them, but overall I was very happy with my meal. For dessert…a bowl of strawberries. It was great! I plan to weigh and measure on Sunday’s, so 🤞🏻🤞🏻🤞🏻my goals are met!

I’m on day 4 and it has been crazy! I’ve still been dealing with headaches but I feel like after seeing the chiropractor and massage therapist today that should be coming to a close 🤞🏻🤞🏻

Yesterday and today were so chaotic with dentist appointments for 6, yes 6 kids, and first day of school today with orthodontist, and theater thrown in there!

Because of how busy yesterday was I ended up eating prepackage meals in addition to my smoothies. The ingredients aren’t perfect as they contain some oils, and I don’t live textured soy protein, but they are decent substitutes on a busy day. I had Bombay potatoes and a vegan chili.

Today I had my smoothies, then burrito bowl leftovers, and corn on the cob and a big fat big fat carrot from the garden, and I tried making waffle fries in the air fryer, but found out the rotisserie function wasn’t working so it wasn’t rotating and I ended up making closer to waffle chips. I will probably try again tomorrow, and hopefully take some pictures!

I’ve also reevaluated my goals, and with the headaches I’ve been having am holding off on adding walking until next week.

The past two days I’ve also drank 1/2 the pitcher of smoothie for breakfast, and then a 1/4 with my lunch, and 1/4 with my dinner. I’ve enjoyed it alot more this way!

2nd day down. We spent the day boating on the lake. I packed all the snacks for all the people, and smoothies for myself. It can be harder when there’s lots of yummy snacks. I was okay, except for needing to p*e SO much!

I had my burrito bowl salad again. You can’t see it, but there are beans and corn and rice under all the vegetables. Not sure if I can do 3 days in a row with the same meal. We will see. My headache crept up again. Hopefully after 3 days or so that’ll let up!

Well I made it through my first day and set my goals for the week which are…

Green smoothie for breakfast/lunch
WFPB dinner (plus a snack if hungry)
Walk my 2 mile route 5x
40 oz of water in addition to what’s in my smoothie

I made burrito bowl and place to eat this each night until it’s gone, so it’ll last me 3-4 more meals, then I’ll make something new and do the same thing.

I ended up with a massive migraine last night, which made me not get very good sleep. I think it was some sugar withdrawals or what not. Hopefully it won’t repeat today, I already am feeling a little off this morning!

I’m back!

I can’t believe it’s been 6 months since posting. Things have been a little crazy for me with a lot of ups and downs. I’ve been on family trips, reunions, and cruise, and had alot if curve balls thrown my way. I have ignored my health and my goals, and gained 20lbs in the process…yikes!

I have not been enjoying how I’ve been feeling and I’m ready to make a change. So here we go.…a 20 week challenge starting tomorrow!!

Ultimate goals are to lose 40 lbs, transition fully to a 80/20 WFPB diet, and face those demons regarding food and self sabotage that I can’t seem to let go of.

I plan to utilize the knowledge I’ve gained from Dr. Brooke Goldner and her hypernourishing protocols (for more information https://www.goodbyelupus.com/?s2-ssl=yes). I’ll be combining that with “The Starch Solution,” and “The McDougall program for Maximum Weight Loss” by John A McDougall.

I will be documenting that journey here for my own motivation and hope to see you along the way!

I have failed to keep updating on here. Probably because I’ve had a hard time getting back on track. What’s amazing is that I’ve been able to still maintain, even though I may have made all the yummy valentines treats and ate them all 🤦‍♀️

It’s all good, I’ve got my mindset back on track! Last Thursday I started a challenge that I would like to continue until my birthday (March 15).
I’m doing Dr. Goldner’s hyper-nourishing smoothie for my breakfast and lunch (64oz total) and then eating my regular dinner, and drinking 96 oz minimum of water. I’m holding strong on keeping dairy out, as I let it creep back in over Christmas!

So what that looks like is I start drinking 32 oz of water when I wake up. Then around 10 start drinking my first 1/2 of my smoothie. Then I drink another 32 oz of water and start drinking my second smoothie between 1 & 2.

I’m liking this because I only need to focus on one meal, so I can make that meal as extravagant or simple as I like. Reminds me of those slim fast commercials, a shake for breakfast, a shake for lunch, and a sensible dinner 🤣🤣🤣

I started this Thursday and was happy to see the weight start to come down. I’ve lost 4 lbs of my 40lb goal for the year. It could be better, but it definitely could have been worse!

So I mentioned in my last post that one week of the month I was going do something more intense to lose weight, and this week will be my week for January.

After a lot of thought I decided for this week to just focus on cutting out processed foods and getting back on track.

To help, I prepped some foods to have on hand throughout the week. I made the following

Cashew Mayo
Ranch dressing
Chickpea Salad
Vegan Pot Pie
Washed and prepped veggies for salads

I’m still having my green smoothie everyday, and the chickpea salad is a favorite so I was excited about that!

On Thursday my church is having an activity and serving pot pies, so I wanted to see if I could find a good replacement. It did not disappoint! My husband ate it for dinner and liked it as well! I used the better then bouillon no chicken base, it worked wonderfully! The biscuits used white flour which I’d normally avoid, but if I’m taking it to a function then I feel like I can make the exception. Most recipes I’ve otherwise tried have left little to be desired. I might play around and try 1/2 whole wheat next time to see if the results are similar. It used homemade cashew cream instead of vegan butter or oil, and I was pleased with the results!

I find I get overly excited and want to try so many new recipes. I usually end up overdoing it, and having way more than I can eat on the fridge. I’m trying to be patient and eat up what I have first…though I am planning to make smashed potatoes tomorrow cause they look amazing 🤩.

It’s the 20th of January and while I have my goals for my health set, I’m still it a bit of rebellion/denial about actually following through in order to meet those goals.

I have two goals, and one supports the other.

1 - Walk an average of 15 miles a week
2 - Lose 40 lbs

40 lbs feels like a lot, especially since I’ve already lost 20, but realistically that’s where I should end up. I hope to reach that goal this year, so long as I’m maintaining my mental health as well. What I’ve learned about myself is that when I have a lot of stress in my life I use food to compensate. It’s something I’m working through.

I kinda have a 3rd goal of giving up dairy this year, but I guess I’m not totally ready to commit. I haven’t eaten meat in 1 1/2 years, and don’t crave it or desire it (aside from when I smell bacon). But the dairy is harder for me, I’m not sure why. Mostly junk food is harder in general, and there has been a lot of difficult things going on in December and January that I’ve allowed to prevent me from going full force on these other goals.

So I created some visuals. The first is for walking and it’s basically a sticker chart cause that’s just fun. 1 sticker for every 3 miles 🙂.

The second is for the weight loss. On the back of each card is an affirmation. So every time I lose a lb, and turn over a card, I get to read positive things, and continue to read them daily.

To help reach my goals, I’ve decided that one week of every month will be a weight loss week. Meaning that I plan to hyperfocus on a specific plan of losing weight that week. It might be a cleanse, a Mary’s mini, or maybe just actually counting calories or something. Upon deciding this I realized I only have 1 full week in January, so I guess I’m committing to start Sunday. I weigh every Sunday morning so I figure I need to start on a Sunday. I haven’t decided yet what I’m doing but stay tuned!

The year has come to a close, it’s hard to believe! This month of December has been more stressful for my family as we have been dealing with some hard things with some children. Mix that with the holidays and it’s the perfect storm.

I’ve not done great with WFPB, but it’s okay, we needed to take care of our family first. Eventually, there will come a point where the stresses of life won’t cause me to derail, but that is not today, and that’s okay.

My husband has been wonderful helping us keep drinking our green smoothies, and honestly, that alone has helped us significantly.

Happy new years to everyone! New year, new goals, new challenges. I’m excited for what is to come!
