I feel like I have done this my whole life. (Remember the fat free diet in the 90's? I lived on candy, pretzels and bagels. Can't believe I am still here.) Everyone has their version of healthy, right? It wasn't until I had some health issues that I found what works for me. I am no expert, but now I focus on eating to feel good instead of trying to loose weight. FOOD CHANGED MY LIFE! Eating food f

For you low carbers....Tried these cauliflower sandwich thins from Costco this morning for breakfast. What a hit! Started with cauliflower sandwich thin,turkey, smoked Gouda cheese, and leftover sautéed cabbage. Topped with guacamole and Sriracha sauce. I want another one! Delicious!!!

Have you ever roasted chickpeas? My first time trying it and I love them! Eat them as a snack or on a salad. They are delicious! I tried two different kinds. I used the Trader Joe’s Greek Chickpeas and only added coconut oil. I also used plain garbanzo beans and added a buffalo seasoning and coconut oil. Baked at 425° for 25 minutes. Stir halfway through. Enjoy!

Have you ever crisped havarti cheese on an egg? My daughter taught me this trick. Fry your egg like you like it until it’s almost done. Top with your favorite cheese and flip. Cook until cheese is crispy. I stacked my egg on arugula and topped with salsa. So good!

Have You ever tried chickpea pasta? It’s loaded with protein and gluten-free. Last night I made a pasta bowl with the chickpea pasta and topped with roasted Brussel sprouts, asparagus, and shredded carrots along with grilled barbecue chicken strips and feta cheese. So good!

I can’t get enough of these mashed sweet potato bowls. Here I used one baked sweet potato, one scoop of vanilla protein, and 1/4 cup almond milk. mashed ingredients together and topped with raspberries, walnuts, and flaxseed meal. Delicious!

Have you ever put fresh squash in your smoothie? Tried another new smoothie recipe this afternoon from . Made her blackberry cobbler smoothie and you can’t even taste the squash!
Blackberry Cobbler Smoothie
1/2 cup almond milk
1 fresh squash
1/3 cup of blackberries (I used fresh)
1/4 t cinnamon
2 T almond butter
1 t vanilla extract
Dash of nutmeg
One scoop of vanilla protein powder
A few ice cubes

What is your weakness when it comes to food? Two of mine are chips and cheese. Made barbecue chicken nachos tonight. Easy to throw together when you are gone all day. White and blue corn tortilla chips topped with crockpot chicken cooked in bone broth, barbecue sauce, mixed greens, red onion, crumbled goat cheese, and peach salsa.

Getting my oats in again. Did you know eating oats can lower cholesterol as well as help control blood sugar. I always make my oats with almond milk and then add a scoop of protein powder. Love topping it with seasonal fruit which also has health benefits. Here I topped my oats with a fresh peach chopped with skin, toasted walnuts, and cinnamon.
