Pasta With Italian Sausage
Ingredients
- 1/2 cup Parmesean Cheese, grated
- 1/4 teaspoon Fennel Seed, crushed
- 1/4 cup Fresh Basil, chopped, or
- 1 clove garlic, crushed
- 1 cup Green Pepper, chopped
- 1 pound Italian Sausage, casings
- 2 tablespoons olive oil
- 1 small onion
- 1/4 cup Italian Parsley, chopped
- 12 ounces Pasta (your favourite)
- 1 cup Tomato-Based Pasta Sauce
- 1/2 cup Red Zinfandel
- Removed

Preparation
Crumble sausage into a large skillet. Cook over medium heat, stirring often, until meat is well browned.

Drain and set aside. In same skillet, cook onion, pepper, garlic, basil and fennel in 1 tb olive oil over medium heat, stirring often to scrape up browned bits from the bottom of pan. Cook until onion is translucent, about 5 minutes.

Add sausage, pasta sauce, and wine. Bring to a boil. Reduce heat and simmer 5 minutes. While sauce is cooking, in a large pot of boiling water cook pasta until al dente.

Drain well.On a large warm serving platter, combine parsley and 1 tb olive oil & fresh basil.

Add pasta and toss to mix.

Pour sauce over pasta.

Sprinkle with Parmesean cheese.

Big Batch Smoothie Bowl
Ingredients
- 90 grams whey protein
- 150 grams frozen strawberries
- 150 grams frozen blueberries
- 3 bananas
- 1 pomegranate
- 60 grams walnuts
- 30 grams pumpkin seeds
- 30 grams flaxseed
- 180 grams granola

Preparation
Blend frozen berries, kefir, and protein powder. It is best to do this in advance so it's not too icy cold.Portion out each serving and top with sliced bananas, pomegranate seeds, granola, ground nuts, and flax.Enjoy!

Pepperoni Pizza Muffins
Ingredients
- cup All Purpose Flour – 2 500mL
- tablespoon Baking Power – 1 15 mL
- teaspoon Baking Soda – ½ 2mL
- teaspoon Salt – ½ 2mL
- teaspoon Dried Basil – ½ 2mL
- teaspoon Dried Oregano – ½ 2mL
- teaspoon Garlic Powder – ½ 2mL
- Large Egg – 1
- cup Milk – 1 250mL
- cup Cooking Oil – ¼ 60mL
- tablespoon Granulated Sugar – 2 30mL
- Diced Tomatoes – 1/2 can
- cup Grated Cheese – ⅔ (or more!) 150mL
- ounce Pepperoni Stick – 2 ½ (or more!) 70g (cut up into squares)

Preparation
Measure first 7 dry ingredients into a large bowl. Stir. Make a well in the centre.

Combine the next 4 ingredients in a medium bowl.

Add to well.

Add tomato, cheese, and pepperoni to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full. (I had extra mix, so I made mini muffins too!)

Bake in a 3750F (1900C) oven for about 20 minutes until a wooden pick inserted into the center of the muffin comes clean.

Let stand in pan for about 5 minutes before removing to wire rack to cool.

Cranberry and Orange Juice Spareribs
Ingredients
- 1 tsp. black pepper
- ½ cup cranberry juice
- 1 tsp. curry powder
- 1 tsp. garlic powder
- 1 tsp. ground cumin
- ¼ cup ketchup
- ½ cup orange juice
- 1 tsp. salt
- ¼ cup soy sauce
- 4 lbs. spare ribs
- ¼ cup vinegar (any kind)
- ¼ cup water

Preparation
Combine all of the ingredients for the marinade in a bowl and stir.

Place ribs in the marinade and refrigerate for at least one hour or more or up to overnight.Preheat oven to 325 degrees F.

Place the ribs in a roasting pan with the marinade.

Bake uncovered for 2 – 2 ½ hours or until the ribs are fall off the bone tender. Allow the marinade to evaporate in the cooking process.

Let the ribs cool slightly; then separate the ribs with a cooking scissor and plate.

Rice Krispie Treats with Maple Syrup and Brown Sugar
Ingredients
- 1 cup brown sugar
- 1/2 cup melted butter
- 11 ½ cups rice cereal
- 3 tablespoons maple syrup
- 4 cups miniature marshmallows
- ½ cup toasted pecans
- ½ teaspoon sea salt
- ¼ teaspoon vanilla

Preparation
Grease a 9x13 pan, or line with parchment paper.Melt butter over medium-low heat in large pot.

Add the brown sugar and maple syrup and stir until the brown sugar has dissolved.

Add the marshmallows and stir until they have melted.Take off heat.

Add the sea salt and vanilla and stir.

Add rice cereal and toasted pecans to the melted marshmallow mixture and then press into prepared pan.

Let cool.

Pumpkin Soup
Ingredients
- 4 cups diced peeled pumpkin pulp
- Boiling milk
- Pepper freshly ground to taste
- 3 carrots, diced
- 3 ribs celery, diced
- 1 onion, finely chopped
- 1 bay leaf
- 6 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon nutmeg
- 1 tablespoon sugar

Preparation
Place pumpkin, carrots, celery and onion in large kettle.

Add the bay leaf and broth. Bring to a boil. Cover and simmer about 1 hour or until pumpkin is tender. Put mixture in blender and return to the kettle. Stir in the remaining ingredients except the milk. Adjust the consistency with the milk.
