Breakfast Egg Muffins!

Eggs
Shredded cheese
Whipping cream
Sliced mushrooms
Fresh spinach onions
Frozen hash browns
Bacon
Diced ham

You can add anything!
Broccoli
Bell peppers
Jalapeños
Asparagus
Whatever floats your boat!

Made mine in my pampered chef mini loaf sheet pan. Makes 4 loads.
Mixed it all up to a consistency I like and than baked them. Be careful not to fill too full, they will rise.

What’s for lunch on this cool Spring day?
I made Gnocci Soup, so yummy.

Recipe:
2 packages Gnocci potato pasta
1/2 stick Blue n Gold Sausage
Stick of butter
Olive oil
Med onion diced (I used a sweet onion)
1/2 bag of shredded carrots
Bunch of celery hearts thinly sliced
Garlic (I love it so use a lot, use the amount you like)
1 cup heavy whipping cream
2 packages fresh baby spinach
Cream of celery soup
Chicken broth
Salt/pepper

Cook the sausage in separate pan. While sausage is cooking add stick of butter with a splash of olive oil in stockpot. Add diced onion and celery. Once the onions and celery are translucent add garlic and cook until fragrant. Add carrots and cooked sausage to stockpot. Mix well and add broth, cream of celery soup, salt/pepper and bring to a boil. Add Gnocci. When Gnocci starts floating add whipping cream. Reduce heat and add the spinach. Mix well and enjoy!

This weather has me wanting to cook!

So far I have made Cheese Dip and I am going to make some Mexican Cornbread and Beans! Yum

Cheese Dip recipe

1 small velvetta stick
1 can rotel, do not drain
1 can green chili enchilada sauce
1 can cream of mushroom soup
1 cup diced tamed jalapeños
1 cup tamed jalapeño juice
3 TBS real butter

If you prefer hot, use regular jalapeños. I make this in a crockpot or even on the stove top.
It is delicious and super creamy, but not too thick.

With this cold weather, what are you all cooking? Me...well tonight I made caramelized onion, sauteed mushroom sausage gravy served over a big buttermilk biscuit with a fried egg on top.....so yummy!

This weather....oh how I love it! I love cooking comfort food and folks gathering to enjoy my food. So tell me what your go to comfort food is and what you love to cook for a crowd!

With the weather cooling down as well as the signs of Fall approaching I am itching to state making some good ol comfort food. I am thinking a big pot of Chili sounds amazing or a Pot Roast with all the fixing. Of course all the meat I use comes from , I would highly encourage you to buy from them as well. Locally owned and operated by some great guys! They are located in Newcastle at 100 N Main St.

SO let me know what you are itching to cook for some yummy Fall comfort food, and I will let you know how my chili turns out....

For as long as I can remember food has equaled family for me. I can remember being a little girl and staying at Nanny’s house...she was a COOK! Wow the food she put out was amazing. Everyone gathered around the table; we laughed, loved and enjoyed each other and the wonderful meal before us. Holiday’s no one brought anything, Nanny prepared it all. There was no sitting at the table, it was covered in homemade goodness. I cherish those memories, and those memories always bring me back to food and love. Nanny put so much love into her meals. Her special for me was a Cherry Pie.

I want to bring back those times around the table for families. Making it easier for you with the yummy sides and main course’s we have to offer. Get home, warm up your choice of sides, or complete meals and enjoy your family. Put the cell phones away and engage in love, laughter and good food.
