Low Carb and Full of Energy!

The Ingredients

Blueberries– Frozen blueberries must be used, not fresh.

Milk of choice– I used unsweetened almond milk, but any low carb milk can be used.

Almond butter– Adds extra staying power and a richer flavor. Substitute other similar products like peanut or cashew.

Instructions:

Start by adding all your ingredients into a high speed blender and blend until thick and creamy. Pour into glasses and enjoy immediately.

Spirulina

Spirulina is most nutritious food on this planet. This blue-green alga is found in freshwater lakes, rivers, and ponds—and now grown in controlled and sanitized areas for human consumption.

Dark, leafy greens

Dark, leafy green vegetables including kale, spinach, collard greens, mustard greens, and swiss chard are some of the most nutritious foods you’ll find in your local supermarket. Leafy green vegetables contain many essential vitamins, minerals, and antioxidants including chlorophyll and carotenoids like lutein and zeaxanthin, vitamin K, vitamin C, folate, iron, and calcium. They are also rich in fiber and surprisingly, contain protein as well.

Broccoli

Broccoli is another green vegetable topping the charts in essential nutrient and antioxidant content. They are part of the cruciferous vegetable family which also includes cauliflower, Brussels sprouts, cabbage, and kale. Keto - Orange Chicken

A great quick dish with a little cheating....

Ingredients

Chicken breast– Skinless chicken breast fillets chopped into bite sized pieces.

Eggs– Mixed with the heavy cream to create a ‘batter’ to cover the chicken in

Heavy cream–When mixed with the eggs, you want the cream to be room temperature.

Coconut flour– To create a ‘batter’ before frying the chicken.
Salt and pepper– To taste.

Oil– To fry everything together. Use an oil with a high smoke point, like peanut oil or vegetable oil.

Keto-Orange Sauce

Orange juice- While orange juice on its own is not keto friendly, it is suitable when used in a recipe like this one. The amount of orange juice per serving comes to just 3 grams of net carbs, so you won’t be kicked out of ketosis!
Sugar substitute– Either a brown sugar substitute or powdered sugar substitute.
White vinegar– Brings out the tang of the orange juice and balances out the sweet and salty flavors.
Soy sauce– Gluten free or tamari can also be used.
Garlic– Freshly minced garlic.
Xanthan gum– A fantastic cornstarch substitute without the excess carbs. This thickens the sauce and helps it stick to all the chicken.

Now Start

Start by preparing the keto orange sauce. In small saucepan, add all the sauce ingredients, except for the xanthan gum. Bring it to a boil, before reducing the heat to low. Add in the xanthan gum and whisk vigorously to ensure there are no clumps. Let the sauce simmer until it has thickened and becomes sticky.

Next, prepare the chicken. In a small bowl, whisk together the eggs and heavy cream, then add the chopped chicken to it. On a large plate, add the coconut flour, salt, and pepper. Moving quickly, dip the chicken in the coconut flour mixture, ensuring all sides are coated.

Now, add oil to a large pan or skillet. Once hot, add the chicken in batches and fry for 2-3 minutes, flipping halfway through. Repeat the process until all the chicken is fully cooked.

Finally, toss the chicken through the orange sauce until completely coated and serve immediately.

FACTS OF THE DAY ....

Cucumbers... I didn't know this... and to think all these years I've only been making salads with the cucumbers...

1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

2. Feeling tired in the afternoon, put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours.

3. Tired of your bathroom mirror fogging up after a shower? Try rubbing a cucumber slice along the mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.

4. Are grubs and slugs ruining your planting beds? Place a few slices in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

5. Looking for a fast and easy way to remove cellulite before going out or to the pool? KETO STIR FRY!!!!!!!!!!

INGREDIANTS FOR STIR FRY

For the stir fry
Chicken– Skinless chicken breast or chicken thigh. I prefer using chicken breast for this particular stir fry as there are plenty of other components included.
Coconut flour OR almond flour– Optional, but lightly coat the chicken in a sprinkling of coconut or almond flour helps seal the juices in the meat and keep them more tender.
Oil– Any oil with a high smoke point to stir fry the protein with, before adding the other vegetables. Do not use sesame oil, as it is already included in the stir fry sauce. Its flavor will also be overpowering if used in high quantities.
Garlic– A must for any good stir fry or Asian-inspired dish.
Onion– Finely chopped or sliced.
Broccoli– Fresh not frozen broccoli.
Bell peppers– Red, green, or yellow bell peppers. People sometimes assume that some bell peppers have higher carbs but that is simply not true. The amount between each color is negligible.
For the stir fry sauce
Keto stir fry sauce– Homemade stir fry sauce. This works as a fantastic base for any stir fry, including this particular recipe.
Sesame oil– Just a drop to give some delicious sesame flavor throughout.
Chili paste– Optional, but highly recommended. Use one with no sugar, like sambal oelek.

How do you make a keto chicken stir fry?

1. Coat the chicken breast pieces in coconut flour (or almond flour).
2. Cook the chicken until no longer pink in the middle.
3. Add the chicken back into the stir fry, add the stir fry sauce, and cook for a further 5 minutes until the sauce has thickened and is bubbling.

Flavor variations

Protein– Shrimp, beef, pork fillet, or tofu.
Vegetables– Green beans, mushrooms, zucchini, and Chinese broccoli (or bok choy).
Spices– Cayenne pepper, Chinese five spice, and black pepper.
Nuts and seeds– Raw cashews, almonds, chopped peanuts, or sesame seeds.

5 Ingredient 5 Easy Steps
Keto Taco Shells

60g (2 cups, firmly packed) baby spinach leaves
2 eggs
40g (1/3 cup) almond meal
2 tsp psyllium husk
1/2 tsp salt

Preheat oven 350 degrees Line 2 baking trays with baking paper.

Place spinach in heatproof bowl and pour boiling water to cover. Set aside for 5 minutes, drain.

Add eggs, almond meal, psyllium husk and salt. Process until smooth. Place one 1/4 of the mixture onto one of the prepared trays make a 15cm circle.

Repeat with remaining 3 circles between the 2 trays. Bake for 10 minutes or until set. Use a spatula to transfer the circles between the gaps of an upturned non-stick muffin pan to create a taco shape. Set aside to cool slightly. Bake for a further 10 minutes to dry out.

Fill with your favorite ingredients.

INGREDIENTS
1 small cubes chicken breast — or chickpeas instead
1 full romaine heart chopped
2 hard boiled eggs — can be soft boiled as well
2-3 pieces of cooked bacon — can be turkey bacon
ÂŒ cup crumbled or cubed feta — as much as you like
œ of an avocado cubed
6-7 cherry tomatoes sliced in half
thinly sliced red onion is optional

The Dressing:
3 tablespoons white wine vinegar
1 tablespoon olive oil
1.5 tablespoons honey dijon mustard
salt and pepper to taste
INSTRUCTIONS

Boil a few eggs, peel and set aside. Start chopping the lettuce and adding it to a bowl. Feel free to use baby spinach or any other leafy greens you like. I cooked my bacon in the air-fryer on the bacon setting but you can also cook it on the stove or even in the oven until crispy. Chop up the bacon into pieces and set aside.

Cook one small piece of chicken breast in a little bit of olive oil salt and pepper. You can cook it in the air-fryer as per my notes or even in the oven. You can also cook it in a pan on the stove or even grill it too. Cube it and add it in the middle of the salad on top of the romaine.

Add the rest of the toppings in the order that you see on my photo or video below and feel free to add anything else you like.

Sprinkle some chives or parsley and make the dressing. In a small mason jar add all of the ingredients for the dressing and give it a shake.

Pour and Enjoy!
